Steps:
- Cut the chicken breasts into chunks.
- For the lemon juice, I squeezed as much juice out of the lemon as I could, and made up the rest with bottled lemon juice.
- In a bowl, combine chicken, 2 tbsp of the lemon juice and garlic, let stand for 15 minutes
- In a separate small bowl, combine broth, cornstarch, honey, lemon rind, and remaining juice. Set aside.
- In a large skillet or wok, heat half of oil over medium-high heat and stir-fry chicken for about 4mins or until browned. Transfer chicken to bowl. Add remaining oil to pan; stir fry broccoli and red pepper for 4 minutes.
- Stir reserved chicken broth mixture, pour into pan. Bring to boil, stirring constantly, until sauce thickens, about 1 minute Reduce heat; cook until vegetables are tender crisp, about 2 to 3 minutes Stir in chicken broth until heated through.
- Serve over rice or noodles if desired.
Tips:
- Choose the right broccoli: Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns that are yellowing or have open florets, as these signs indicate that the broccoli is past its prime.
- Cut the broccoli into uniform florets: This will help them cook evenly. If the florets are too large, they may not cook through properly, while if they are too small, they may become mushy.
- Blanch the broccoli before roasting: Blanching helps to preserve the broccoli's bright green color and crisp texture. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender-crisp. Immediately remove the broccoli from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
- Season the broccoli well: Lemon pepper is a classic seasoning for broccoli, but you can also try other seasonings, such as garlic powder, onion powder, paprika, or chili powder.
- Roast the broccoli at a high temperature: This will help to caramelize the broccoli and give it a slightly charred flavor.
- Serve the broccoli immediately: Roasted broccoli is best served hot or warm. If you need to make it ahead of time, you can roast the broccoli and then reheat it in a preheated oven before serving.
Conclusion:
Lemon pepper broccoli is a delicious and healthy side dish that can be enjoyed by people of all ages. It is a good source of vitamins, minerals, and fiber, and it is also low in calories and fat. This dish is easy to make and can be prepared in under 30 minutes. So next time you are looking for a healthy and delicious side dish, give lemon pepper broccoli a try!
