2 corn cobs (husks and silk removed)
ground black pepper (fresh)
1 teaspoon lemon pepper (seasoning no added salt Masterfoods recommended)
2 (150 g) cod fish fillets (blue-eye)
cooking spray
30 g salad leaves (2 cups mixed)
30 g snow pea sprouts (trimmed)
2 tomatoes (quartered)
1/2 avocado (small thinly sliced)
1 tablespoon lemon juice (fresh)
2 teaspoons white wine vinegar
1/2 teaspoon olive oil
ground black pepper (fresh)

Steps:

  • Preheat barbecue plate and barbecue grill to medium.
  • Place each corncob on a piece of foil and season with pepper and wrap to enclose and put on barbecue plate and close barbecue lid and cook, turning once, for 20 minutes or until the corn is tender and then remove from the barbecue and set aside int he foil.
  • Tube the seasoning over each side of fish fillets and then spray each side with cooking spry and put fish on barbecue grill and cook on each side for 2 to 2 1/2 minutes or until just cooked.

3 large cloves garlic, minced
2 (8 ounce) fillets catfish
2 tablespoons lemon pepper seasoning (such as McCormick®)

1 ½ teaspoons Creole seasoning (such as Tony Chachere's®)
1 lemon, thinly sliced
¼ cup shredded carrot
2 tablespoons chopped fresh parsley
1 lemon, quartered

Steps:

  • Pour the juice of 5 lemons into a glass bowl; whisk in the sea salt and garlic. Add the catfish fillets, cover, and marinate in the refrigerator 1 to 4 hours.
