1/4 teaspoon salt
1 3/4 cups granulated sugar
1/4 cup packed light-brown sugar
1 tablespoon finely grated lemon zest, plus 1 tablespoon fresh lemon juice
1 cup unsalted butter, (2 sticks), softened
2 large eggs
Sanding sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Sift flour, baking soda, and salt into a bowl; set aside.
  • Put sugars and lemon zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, about 1 minute. Mix in eggs, 1 at a time, and then the lemon juice. Reduce speed; gradually add flour mixture, and mix until just combined.
  • Scoop dough using a 2-inch ice cream scoop; space cookies 2 inches apart on parchment-lined baking sheets. Flatten cookies slightly with a spatula. Sprinkle tops with sanding sugar, then lightly brush with a wet pastry brush; sprinkle with more sanding sugar.

These large 3 1/4 inch cookies have a wonderful lemon flavor and a chewy texture. I prefer them without the sugar glaze, but it makes a classic cookie base for holiday frosting. I can't remember where I found this gem, I have modified it some. Our family has looked for a good sugar cookie recipe for years and just loves this one. I find that chilling the cookie dough before baking really helps in maintaining a "classic" shape during baking, but be sure to press the cookie before placing in the oven or they will be "gooey" in the center. I like to use an ice cream scoop that I found at Bed, Bath, and Beyond for a consistent volume. It is just slightly larger than 1 tablespoon. Perfect for these cookies. 1 teaspoon baking soda

  • Preheat oven to 350°.
  • Sift flour, baking soda, and salt into a bowl and set aside.
  • Put sugars and lemon zest in the bowl of an electric mixer (paddle attachment if available) and mix at medium speed for about 30 seconds (until well blended).

2 teaspoons finely grated lemon zest (about 1 large lemon)
1 large egg yolk
3/4 teaspoon pure vanilla extract
5 ounces white royal icing (marshmallow cream consistency for outlining and flooding, in piping bag with no tip)
5 ounces yellow royal icing (marshmallow cream consistency for outlining and flooding, in piping bag with no tip)

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine the flour and salt in a medium bowl and whisk to combine. Put the butter, granulated sugar, confectioners' sugar and lemon zest in a large bowl. Beat with an electric hand mixer on medium speed until light and fluffy, about 3 minutes. Add the egg yolk and vanilla and beat until well combined. Add the flour mixture in 2 batches and mix until just combined.
  • Scoop the dough with a 2-ounce cookie scoop, filling it fully with the dough. Then shape it into a straight-sided patty (like a hockey puck) that is 2 inches wide and 1/2 inch thick.   • Flip your cookies upside down so the flattest side is up. Use the yellow icing to make a thin line around the edge of each cookie. Then make 2 loops around the interior of the yellow border with the white icing and use a toothpick to fill in any gaps between the two colors. Fill in the middle space with the yellow icing and then make a circle with the white directly in the center. Immediately use a scribe or toothpick to lightly drag from the edge of the cookie to the middle to create the segments of your lemon. Repeat with the remaining cookies.

2 cups butter, softened
4 cups confectioners' sugar
4 large eggs
3 tablespoons lemon juice
3 tablespoons half-and-half cream
2 teaspoons grated lemon zest
6-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in lemon juice, cream and lemon zest. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Cover and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll out to 1/8-in. thickness. Cut with 2-1/2-in. cookie cutters dipped in flour. Place 1 in. apart on ungreased baking sheets. Sprinkle with sugar. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

I call these "summer" cookies because I made them for a June graduation party. They are very refreshing and light. Top with a lemon glaze and you have perfection! I received this recipe in a newsletter from the Old Farmer's Almanac.

2 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup butter, room temperature
2 cups sugar
2 eggs
2 teaspoons grated lemon rind
3 tablespoons lemon juice
1 cup quick oats

Steps:

  • Sift together flour, baking powder and salt.
  • In a large bowl, cream butter and sugar; add eggs, beating well.
  • Beat in lemon rind and juice.
  • Gradually add flour mixture, then stir in oats.
  • Chill dough thoroughly (at least 2 hours).
  • Roll level tablespoonfuls of dough into balls and place onto greased cookie sheets, allowing room for cookies to spread.
  • Using a flat-bottomed glass or custard cup that has been greased and dipped into sugar, flatten each ball to a 1/4 inch thickness (dip the glass into sugar each time).
  • Bake at 375 degrees F until lightly browned around the edges, about 8 - 10 minutes.
  • Cool on cookie sheet for 1 minute, then carefully move to wire rack.

1 teaspoon baking powder
5 tablespoons margarine
1/3 cup sugar
1 teaspoon lemon peel
2 drops yellow food coloring (optional)
1/4 cup lemon juice
2 tablespoons sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray 2 non-stick cookie sheets with cooking spray, set aside.
  • In a small bowl, combine flour and baking powder.
  • In a med bowl, using an electric mixer, cream margarine and 1/3 cup of sugar until light and fluffy.
  • Beat in lemon peel and food coloring.
  • Alternately beat in flour mixture and lemon juice until well blended.
  • Shape dough into 1in balls and roll in 2 tbs sugar (if using).
  • Place 2in apart on prepared baking sheets.
  • Using the tines of a fork, press a crisscross pattern into each cookie.
  • Bake until edges are lightly golden, about 10 minutes.
  • Transfer cookies to a wire rack to cool completely.

GIANT SIZED LEMON SUGAR "CRISP" COOKIES
LEMON SUGAR
2 C sugar (divided)
2 zest divided (of 2 lemons only)
COOKIE DOUGH
1 C butter, softened
2 Lg eggs, @ room temp
1 tsp vanilla
1 TBS lemon juice (from lemon above)
2 3/4 C flour
1/4 tsp salt
2 tsp cream of tartar
1 tsp baking soda

Steps:

  • 1. PREHEAT OVEN @ 350 degrees BAKE 10-12 Minutes . . MAKES 24 GIANT cookies
  • 2. 1st. Prepare LEMON SUGAR: In mini food processor, blend 1/2 C sugar with 1 tsp LEMON ZEST. pulse several times till incorporated well into the sugar. Place in shallow bowl and SET ASIDE.
  • 3. PREPARE COOKIE DOUGH: Stir together Flour salt Cream of tartar and baking soda, set aside.
  • 4. In large Mixing bowl, CREAM together BUTTER, and remaining 1 1/2 C sugar, Blend in eggs, one at a time, thn add Vanilla, lemon juice, and remaining Lemon Zest.
  • 5. ADD FLOUR MIXTURE, one cupat a time, blending well after each cup until well incorporated. CHILL DOUGH 1 HR.
  • 6. SHAPE THE COOKIES: using a jumbo cookie scoop or your hands, Shape 2 TBS full of dough into a ball then roll into lemon sugar.
  • 7. Place on Cookie sheet Flatten, by pressing lightly down with bottom of a glass util cookie is about 1/2" thick. REPEAT.
  • 8. (6) cookies will fit on one 18" X 13" baking sheet.
