Yield 8 servings

Number Of Ingredients 7

2 cups graham cracker crumbs
1/4 cup granulated sugar
7 tablespoons butter, melted
One 14-ounce can sweetened condensed milk, chilled
One 12-ounce container whipped topping, thawed

1 teaspoon candied lemon peel, for garnish

Steps:

  • For the crust: Preheat the oven to 350 degrees F.

Lemonade Pie Recipe - (4.4/5) image

Provided by msippigrl

Number Of Ingredients 7

1 (8 oz) block cream cheese, softened slightly
1 (14 oz) can sweetened condensed milk, chilled
3/4 cup frozen lemonade concentrate, thawed then measured
2 drops yellow food coloring (optional)
1 (8 oz) tub Cool Whip, thawed
1 or 2 (9-inch) shortbread or graham cracker crust *see Note below*
Note: This made a really full pie, so next time I will use 2 crusts then top off with some additional Cool Whip or whipped cream. Or use the larger '2-extra servings' graham cracker crust.

Steps:

  • Put the crust(s) in the freezer until needed. In a mixing bowl and using a hand mixer, beat the cream cheese with the condensed milk until smooth and creamy. Beat in the lemonade concentrate and food coloring if using. Using a spatula, gently fold in the Cool Whip until no yellow streaks remain. Spoon mixture into the chilled crust(s); smooth top. Cover and refrigerate several hours or overnight for pie to set. Garnish if desired with thin lemon slices.

1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a blender, combine lemonade concentrate, cream cheese, and condensed milk. Blend on medium speed until mixture is smooth. Transfer mixture to a bowl and fold in whipped topping. Pour mixture into graham cracker crust. Chill before serving.

Tips:

  • Use Fresh Lemons: Freshly squeezed lemon juice provides the best flavor for the pie filling. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be slightly less bright and tangy.
  • Chill the Pie Crust: Chilling the pie crust before baking helps to prevent it from shrinking and becoming tough. You can chill the crust for at least 30 minutes, or up to overnight.
  • Don't Overcook the Filling: The lemon filling should be thick and slightly runny when it is done. If you overcook it, it will become thick and rubbery.
  • Let the Pie Cool Completely: It's important to let the pie cool completely before serving. This allows the filling to set properly and the flavors to meld together.

Conclusion:

Lemon pie is a classic dessert that is perfect for any occasion. It's easy to make and always a crowd-pleaser. With its bright and tangy flavor, creamy filling, and flaky crust, lemon pie is a surefire hit. Whether you're making it for a special occasion or just because you have a craving for something sweet, this recipe is sure to satisfy.
