Lentil soup is a hearty, simple dish that is perfect for a cold day or a quick weeknight meal. It can be made with a variety of ingredients, but the most traditional version includes lentils, peas, ham, and vegetables. Lentils are a type of legume that are high in protein and fiber, and they have a mild, nutty flavor. Peas are also high in protein and fiber, and they add a sweet, starchy flavor to the soup. Ham adds a smoky, savory flavor to the soup, and it also helps to thicken the broth. Vegetables such as carrots, celery, and onions add flavor and texture to the soup.

This lentil soup with ham is a combination of two soup recipes I came across and adapted. I often serve it for Sunday dinner, making enough so there are leftovers for my husband's lunch thermos. A bricklayer, he regularly works outside during winter. -Andi Haug, Hendrum, Minnesota
