I love the rich, nutty flavor of these delicious burgers. I don't think of them as an alternative to meat, but a tasty patty standing on it's own merits. It's delicious served with a creamy, mushroom sauce.

My daughter's boyfriend's mom gave her a cookbook that was created by the Houston Ballet for their Nutcracker Christmas Market in 1984. The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Sandra Organ, Corps de Ballet.

Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties. 3. Heat remaining 3 tablespoons oil in a large nonstick skillet. Add burgers; cook over medium-low heat until crisp and browned, turning gently with a thin-edged spatula, 8 to 10 minutes per side. Transfer to a paper-towel-lined plate to drain. Yogurt Cilantro Sauce In a small bowl, whisk together yogurt, cilantro, and lemon; season with salt and pepper.

Tips:

  • Soaking lentils: Soaking lentils overnight or for at least 4 hours helps to soften them and reduce cooking time. It also makes them easier to digest.
  • Use a food processor: A food processor makes it quick and easy to grind the lentils and walnuts into a smooth mixture.
  • Season the mixture well: Don't be afraid to add plenty of spices and herbs to the lentil-walnut mixture. This will give the burgers lots of flavor.
  • Form the burgers gently: Be gentle when forming the burgers, as the mixture can be delicate. Use a light touch to avoid breaking the burgers apart.
  • Cook the burgers over medium heat: Cooking the burgers over medium heat helps to prevent them from burning on the outside while remaining raw on the inside.
  • Serve the burgers immediately: Lentil-walnut burgers are best served immediately after cooking. They can be served on buns with your favorite toppings, or with a side of salad or roasted vegetables.

Conclusion:

Lentil-walnut burgers are a delicious and healthy alternative to traditional beef burgers. They are packed with protein, fiber, and healthy fats, and they are also relatively low in calories. Plus, they are easy to make and can be customized to your liking. Whether you are a vegetarian or meat-eater, lentil-walnut burgers are a great option for a healthy and satisfying meal.
