Provided by Reynolds Kitchens(R)

Categories     Trusted Brands: Recipes and Tips     Reynolds®

Time 1h10m

Yield 4

Number Of Ingredients 8

2 pounds Yukon Gold potatoes, peeled, sliced 1/4-inch thick
1 whole garlic clove
4 tablespoons unsalted butter, melted, plus more for greasing pan
2 cups heavy cream
1 tablespoon fresh thyme, leaves only
1 cup freshly grated Parmesan cheese, divided
Salt and pepper to taste
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 375 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside. The sheet will catch any spills in the oven later on.
  • Place the potato slices in a large pot and cover with cold water. Season with salt and bring to boil for 5 minutes. Drain in a colander and allow the potatoes to steam for 1 minute.
  • Rub a 10-inch baking dish with the garlic clove and generously butter the dish. Finely chop the garlic. Set aside.
  • With the heat off, transfer the potatoes back to the pot and add heavy cream, thyme, half of the Parmesan cheese, chopped garlic, melted butter, salt and pepper. Stir all of the ingredients together until the potatoes are well coated.
  • Layer the potatoes on top of each other in the buttered baking dish. Pour any remaining liquid on top of the potatoes. Place the baking dish on the prepared baking sheet. Cover the baking dish with foil and bake for 40 minutes. Remove the foil from the baking dish, add the remaining cheese and bake for 15-20 minutes, or until golden brown.

Tips:

  • Choose the Right Potatoes: Select firm, starchy potatoes like Russets or Yukon Golds for the best scalloped potato dish. These potatoes hold their shape well and absorb the creamy sauce.
  • Thinly Slice the Potatoes: For even cooking, slice the potatoes thinly and uniformly. Use a sharp knife or a mandoline for precise and consistent slices.
  • Create a Flavorful Sauce: Use a combination of milk, cream, and broth to create a rich and flavorful sauce. You can also add herbs, spices, and seasonings like garlic, onion, thyme, salt, and pepper to enhance the taste.
  • Layer the Potatoes and Sauce: Arrange the potato slices in a single layer in a baking dish, overlapping them slightly. Pour the sauce over the potatoes and repeat the layers until all the ingredients are used up.
  • Top with Cheese: For a golden-brown and cheesy crust, sprinkle shredded cheddar, Parmesan, or Gruyère cheese over the top layer of the potatoes. This adds a delicious and indulgent touch to the dish.
  • Bake Until Golden Brown: Bake the scalloped potatoes in a preheated oven until the potatoes are tender and the sauce is bubbly. The top should be golden brown and crispy.
  • Let it Rest: Allow the scalloped potatoes to rest for a few minutes before serving. This helps the dish set and makes it easier to slice and serve.

Conclusion:

Libby's Scalloped Potatoes is a timeless classic that combines simple ingredients and easy steps to create a comforting and delicious side dish. With its creamy sauce, tender potatoes, and cheesy topping, this dish is sure to be a hit at any gathering. Experiment with different cheeses, herbs, and spices to customize the flavor profile and make it your own.
