"Life preserver meatloaf" is a term used to describe a meatloaf that is cooked while wrapped in bacon, creating a barrier that helps to keep the meatloaf moist and flavorful. This technique results in a tender and juicy meatloaf, while the bacon adds a crispy and smoky flavor to the dish. The bacon also helps to hold the meatloaf together, preventing it from falling apart. If you're looking for a delicious and easy way to cook meatloaf, then the life preserver method is the way to go.

Time 1h15m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

THE LIFE-CHANGING LOAF OF BREAD

THE LIFE-CHANGING LOAF OF BREAD image

This recipe was found on www.mynewroots.org. It was posted by Sarah Britton who got the recipe from a friend. I'm posting it here for safekeeping. This dense bread is high in protein and fiber; it's also gluten-free and vegan. SOME NOTES: Do not substitute the psyllium. If you have a nut allergy, replace nuts with seeds. If you use ground flax seeds you will need more water. You will also need more water if you use quinoa instead of oats. Use certified gluten-free oats if you have a gluten sensitivity. I just made this loaf; it was easy to put together. I'm not sure if it's the ingredients or I'm just not used to 'healthy' food. I didn't like it at room temperature (it is a little better refrigerated.) I tried to get all unsalted ingredients but was unsuccessful. I will probably omit the salt the next time I try it. the loaf had the saltiness of salt water. Thank you, Snowpea, for suggesting I add the parchment paper to the instructions.

Time 3h15m

Yield 1 loaf

Number Of Ingredients 10

1 cup sunflower seeds
1/2 cup flax seed
1/2 cup hazelnuts (or almonds)
1 1/2 cups rolled oats
2 tablespoons chia seeds
4 tablespoons psyllium, seed husks (3 Tbsp. if using psyllium husk powder)
1 teaspoon fine grain sea salt (add 1/2 tsp. if using coarse salt)
1 tablespoon maple syrup (for sugar-free diets, use a pinch of stevia)
3 tablespoons melted coconut oil (or 3 Tbsp ghee)
1 1/2 cups water

Steps:

  • Preheat oven to 350°F.
  • Combine all dry ingredients in a flexible, silicon loaf pan. Stir well.
  • Whisk maple syrup, oil and water together in a measuring cup. Add to dry ingredients. Mix very well until everything is completely soaked and dough becomes very thick (if the dough is too thick to stir, add one or two teaspoons of water until the dough is manageable). Smooth out the top with the back of a spoon. Let sit out on the counter for at least 2 hours, or all day or overnight. To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it. If using a metal loaf pan, line it with parchment paper before adding the ingredients. The loaf will come out easily when it's time to take it out to turn it.
  • Place loaf pan in the oven on the middle rack, and bake for 20 minutes.
  • Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30-40 minutes. Bread is done when it sounds hollow when tapped. Let cool completely before slicing.
  • Store bread in a tightly sealed container for up to five days. Freezes well too - slice before freezing for quick and easy toast!

Tips:

  • Choose the Right Ground Meat: Use a combination of ground beef and ground pork for a moist and flavorful meatloaf. You can also use ground turkey or chicken for a leaner option.
  • Breadcrumbs and Oats: Incorporating breadcrumbs or oats into the meatloaf mixture helps absorb moisture and create a tender texture.
  • Seasoning: Don't be shy with the seasonings! A blend of garlic, onion, salt, and pepper is a classic, but you can also add herbs like thyme, rosemary, or sage for extra flavor.
  • Eggs and Milk: Eggs and milk help bind the meatloaf mixture together and add moisture. If you're looking for a richer flavor, use heavy cream instead of milk.
  • Shape and Bake: Form the meatloaf mixture into a loaf shape and place it in a baking dish. Bake in a preheated oven until the internal temperature reaches 160°F (71°C).
  • Glaze or Sauce: To add extra flavor and moisture, brush the meatloaf with a glaze or sauce during the last 15 minutes of baking. Common glazes include ketchup, barbecue sauce, or a mixture of honey and mustard.

Conclusion:

With endless variations and flavor combinations, the life preserver meatloaf is a versatile dish that's perfect for any occasion. Whether you prefer a classic recipe or something more adventurous, these tips will help you create a delicious and memorable meatloaf that everyone will enjoy. So grab your apron and get ready to impress your family and friends with this timeless dish!
