1 (15 ounce) can pumpkin puree
1 egg
⅔ cup white sugar
¼ cup vegetable oil
½ cup applesauce
2 teaspoons vanilla extract
2 cups all-purpose flour
1 (1 ounce) package sugar-free instant vanilla pudding mix
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 (6 ounce) package semisweet chocolate chips, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 16 muffin cups with paper liners. Spray liners with cooking spray.

3/4 cup mashed ripe banana (about 1-1/2 medium bananas)
1/2 cup granulated sugar
1/4 cup vegetable oil
1 egg
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup low-fat plain yogurt or 1/2 cup low-fat sour cream
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 375°F.
  • Spray a 12-cup muffin pan with cooking spray.
  • In a large bowl and using an electric mixer, beat together bananas, sugar, oil, egg, and vanilla until well mixed.

2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1 cup sugar
2 tablespoons margarine, melted
1 cup skim milk
1 teaspoon vanilla extract
1/3 cup miniature semisweet chocolate chips
cinnamon-sugar mixture (optional)

Steps:

  • Preheat oven to 400°F.
  • Coat a 12-muffin tin with nonstick cooking spray.
  • Whisk the flour with the baking powder and salt and set aside.
  • Beat the egg, sugar and margarine with an electric mixer set on medium until smooth.
  • Add the milk and vanilla and beat again.
  • Mix the flour and chocolate chips into the batter by hand just until combined.
  • Spoon the batter into the muffin cups so that each is about two-thirds full.
