Steps:
- Place your prepared mango in a serving dish.
- In a pot add the lime juice, lemongrass and sugar.
- Heat gently, no boiling until the sugar is completely dissolved.
- Do not use juice until it is completely cooled.
- Strain the juice and pour over the mango wedges.
- Sprinkle with the lime rind, cover, chill for at least 3 hours.
- Serve in small bowls with a scoop of ice cream or sherbert and garnish with the sprigs of mint.
Tips:
- To achieve the perfect consistency for your lime curd, stir it constantly over medium heat until it thickens enough to coat the back of a spoon. This usually takes around 10-12 minutes.
- There's no need to zest and juice the limes separately. Simply use a Microplane grater to remove the zest directly into a bowl, then cut the limes in half and juice them into the same bowl.
- When making the lime curd, strain it through a fine-mesh sieve to remove any lumps and ensure a smooth texture.
- Chill the lime curd for at least 4 hours before serving to allow the flavors to meld and develop.
- For the Lime Surprise dessert, use a sharp knife to cut clean slices of angel food cake. This will help prevent the cake from crumbling.
- Arrange the cake slices and lime curd in layers, alternating between the two. This creates a visually appealing and flavorful dessert.
Conclusion:
With its vibrant green hue, tangy flavor, and creamy texture, the Lime Surprise dessert is a refreshing and delightful treat that is perfect for any occasion. Whether you're looking for a simple yet elegant dessert to serve at a dinner party or a sweet and satisfying snack to enjoy on a hot summer day, this recipe is sure to impress.
