My Mum got this recipe about 20 years ago from one of her friends. It is delicious served chilled in the summertime. Prep time is for the tea and sugar mixes, cook time is an estimate for chilling as I haven't made this in ages. I estimate the serving size to be 250 ml, but maximum yield is around 2 litres.

3 tea bags
2 cups boiling water
1/2 cup lime juice, strained
1/2 cup sugar
1/2 cup water, extra
1 1/4 liters lemonade

Steps:

  • Pour boiling water over tea bags and leave to stand for 5 minutes.
  • Remove tea bags and add strained lime juice; cool.
  • Combine sugar and extra water in pan, stir over low heat without boiling until sugar is dissolved, then boil without stirring for 3 minutes. Cool.
  • Add sugar syrup to lime and tea mixture and chill again.
  • Add chilled lemonade just before serving and decorate with slices of lime and fresh mint.

3 cups boiling water
12 sprigs fresh mint
4 tea bags
1 cup white sugar
1 cup orange juice
¼ cup lemon juice
5 cups cold water
3 orange slices for garnish
3 lemon slices for garnish

Steps:

  • Place the tea bags and mint sprigs into a large pitcher. Pour boiling water over them, and allow to steep for about 8 minutes. Remove and discard the tea bags and mint leaves, squeezing out excess liquid. Stir in sugar until dissolved, then stir in the orange juice and lemon juice. Pour in the cold water. Serve over ice cubes, garnished with orange or lemon slices.

16 ounces (2 cups) Demerara sugar
20 ounces (2 1/2 cups, from about 10 large limes) freshly squeezed lime juice
50 ounces (6 1/4 cups) Banks 5 Island Rum (or substitute Appleton Estate Reserve, Mount Gay Black Barrel, or Bacardi 8)
1 whole nutmeg, or pinch ground nutmeg, for garnish

Steps:

  • In a large heatproof bowl, combine the hot teas and sugar. Stir until sugar is dissolved. Add 4 cups ice, and stir until ice has dissolved and the tea is cool. Add the lime juice and rum, and stir well.
