1 (8 ounce) package cream cheese, softened
½ cup sour cream
½ cup mayonnaise
¼ cup cocktail sauce
1 cup mild salsa
¾ cup diced green onion
¾ cup diced red bell pepper
¾ cup diced green bell pepper
2 cups shredded Cheddar cheese
2 cups shredded lettuce
1 cucumber, thinly sliced

Steps:

  • In a blender or food processor, thoroughly mix cream cheese, sour cream and mayonnaise. Spread the mixture evenly in the bottom of a medium serving dish.
  • In individual layers, top the mixture with cocktail sauce, mild salsa, diced green onion, red bell pepper, green bell pepper, shredded Cheddar cheese and shredded lettuce.

  • 1. Combine first five ingredients in a bowl and mix well. Then spread the beans in a casserole dish. 2. Preheat a large skillet. Drizzle with olive oil and add ground beef, onions and garlic from the next list of 8 ingredients. Add cumin, oregano, cilantro, salt and pepper. Brown beef and add it as the next layer of the dip. 3. In a clean skillet, melt butter. Add flour and whisk to make a roux. Add salt, garlic powder, onion powder and paprika. Cook for 2 - 3 minutes over medium heat until it smells nutty. Add milk and turn heat to high, stirring constantly until it boils. Then reduce to a simmer. Simmer for a few minutes and then remove from heat. Add cheese and whisk until it is all melted. Do not place back on heat again. Pour cheese sauce over beef. 4. Layer the next five ingredients in your casserole dish: lettuce, tomato, red onion, fresh cilantro, and black olives. 5. For the guacamole, add the next ingredients to a large bowl: avocados, the juice of 1 lime, 1 clove chopped garlic, and freshly chopped cilantro. Mash with a fork until well combined. Spoon guacamole over dip. Finish by adding sour cream on top. Serve with tortilla chips and enjoy!

1 (18 ounce) package tortilla chips
1 ½ pounds cooked, Mexican-seasoned ground beef
1 (15 ounce) can black beans, drained
3 medium jalapeno peppers, thinly sliced
3 cups pico de gallo
1 (16 ounce) package shredded medium Cheddar cheese
3 cups queso blanco dip, warmed
¼ head iceberg lettuce, shredded
1 cup sour cream
1 tablespoon water, or as needed
2 stalks scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet with cooking spray.
  • Arrange a layer of tortilla chips on the tray.
