HERBED CHICKEN IN PASTRY

1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1 egg
1 tablespoon water
Ground black pepper (optional)
4 skinless, boneless chicken breast halves (about 1 pound)
2 tablespoons butter
1 container (4 ounces) garlic & herb spreadable cheese
1/4 cup chopped fresh parsley

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
  • Season the chicken with the black pepper, if desired. Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken to a plate. Cover the plate and refrigerate for 15 minutes or up to 24 hours.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Cut into 4 (7-inch) squares.
  • Spread about 2 tablespoons cheese spread in the center of each pastry square. Top each with 1 tablespoon parsley and 1 chicken breast. Brush the edges of the pastry squares with the egg mixture. Fold the corners of the pastry squares to the center over the chicken and press to seal. Place the filled pastries seam-side down onto a baking sheet. Brush the pastries with the egg mixture.
  • Bake for 25 minutes or until the pastries are golden brown. Let the pastries cool on the baking sheet for 10 minutes.
  • Serving Suggestion: Serve Bibb lettuce wedges with tomatoes and basil and Italian dressing. For dessert serve coffee ice cream with butterscotch or whipped cream.

4 pieces skinless boneless chicken breasts
Salt/Pepper
2-3 Sprigs chopped rosemary
1 T. olive oil
1 Sheet puff pastry
8 slices fontina cheese
1/2 C. fig preserves
1 egg mixed with 1 T. water

Steps:

  • Preheat oven to 400 F. Season chicken with salt/pepper/rosemary. Cut each piece of chicken in half, 8 pieces total. Heat oil in a non-stick skillet over med-high heat. Lightly brown the chicken on both sides, 6-7 mins total. Remove from heat. Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves. Pinch and seal the dough over the meat and cheese, seal with egg wash, flip the pastry packet over and brush the tops with remaining egg wash. Bake 12-15 mins, until golden.

EASY CHICKEN-N-PASTRY



Easy Chicken-N-Pastry image

Easy, uses frozen dumplings. Makes a big potful, had to guess at number of servings. I adapted this from the basic recipe on the frozen dumpling box. I always use Anne's Dumplings in the red box (www.annesdumplings.com) but you could use any brand frozen dumpling strips.

1 whole chicken
1 -2 bay leaf
water
salt and pepper
1 (1 1/2 lb) box frozen dumplings, strips
1 can campbell cream of chicken soup

Steps:

  • Rinse chicken and discard giblets.
  • In a large pot boil the chicken with bay leaves, salt and pepper.
  • Remove the chicken to a platter to cool; once cool enough to handle, remove meat from the bones.
  • Skim the fat from the broth and add enough water to get 4 or 5 qts (I use a skimmer cup).
  • Bring broth to a rolling boil and drop the frozen pastry strips in a few at a time, stirring to separate and return to a boil before dropping in more.
  • When all the strips are in the pot, reduce heat to medium-low and let boil a few minutes.
  • Reduce heat to low and stir in chicken meat and cream of chicken soup, stirring until chicken soup is incorporated.
  • Season to taste with black pepper- should already be salty enough from the cream of chicken soup, but taste and add salt if necessary.
  • Remove from heat, cover and let stand 15 minutes before serving.
  • I serve this with cornbread; green peas are a good side dish.

1 sheet frozen puff pastry, thawed
1/2 cup spreadable spinach and artichoke cream cheese
4 slices Muenster cheese, halved
1 egg
1 tablespoon water

Steps:

  • Sprinkle chicken with salt and pepper; set aside. On a lightly floured surface, roll puff pastry into a 14-in. square. Cut into four squares. , Spoon 2 tablespoons cream cheese into the center of each square; top with Muenster cheese and chicken., Whisk egg and water; lightly brush over edges. Bring opposite corners of pastry over each bundle; pinch seams to seal. 2 packages (10 ounces each) frozen pastry shells
2 celery ribs, finely chopped
1 medium onion, chopped
2 tablespoons chopped green pepper
6 tablespoons butter, divided
6 tablespoons all-purpose flour
1/2 teaspoon salt
3 cups milk
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
4 cups cubed cooked chicken
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
1/2 cup grated Parmesan cheese
1/2 cup sliced almonds

Steps:

  • Bake pastry shells according to package directions; set aside. In a skillet, saute the celery, onion and green pepper in 1 tablespoon butter for 10 minutes or until tender. Remove from the heat and set aside., In a large saucepan, melt the remaining butter over medium heat. Stir in flour and salt until smooth. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in soup until blended. Add the chicken, mushrooms, pimientos and sauteed vegetables; mix well., Transfer to a greased 3-qt. baking dish. Sprinkle with Parmesan cheese and almonds. Bake, uncovered, at 350° for 20-25 minutes or until bubbly. Spoon into pastry shells.
