LOW CARB CHOCOLATE CHIP COOKIES

Low Carb Chocolate Chip Cookies image

These are pretty good. No, they do not taste exactly like traditional chocolate chip cookies, but they're good for sweet cravings. They're somewhat like shortbread cookies, with chocolate chunks. I plan on trying to use more almond meal and less baking mix next time, as I don't care for the taste of the mix. For the chocolate, I used a mixture of hershey's sugar free dark and milk chocolates.

Time 20m

Yield 18-24 cookies

Number Of Ingredients 8

3/4 cup low-carbohydrate baking mix
1/2 cup almond flour or 1/2 cup almond meal, see note
1/4 cup unsalted butter, softened
2 teaspoons vanilla
1 egg
1 egg yolk
1 cup Splenda sugar substitute
2 -3 ounces sugar-free bittersweet chocolate

Steps:

  • In a food processor, mix together bake mix, almond meal, and splenda.
  • Add butter to processor and pulse until crumbly.
  • In a separate bowl, mix egg, yolk, and vanilla.
  • Add the bake mix mixture to the egg mixture, a small amount at a time.
  • Stir in chocolate pieces.
  • Drop dough by tablespoons onto parchment lined baking sheet and flatten slightly with a spoon.
  • Bake at 325 for 8-10 minutes.
  • Cool, and transfer to airtight container.
  • NOTE: To make almond meal/flour, Process almonds in a food processor until fine; careful not to overprocess, or you'll end up with almond butter.

Tips:

  • Use almond flour and coconut flour. These low-carb flours are high in fiber and healthy fats, and they help give the cookies a chewy texture.
  • Add a little sweetener. You can use a low-carb sweetener like erythritol or stevia, or you can use a natural sweetener like honey or maple syrup. Just be sure to use it sparingly, as too much sweetener can make the cookies too sweet.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Bake the cookies at a low temperature. This will help them to spread out and cook evenly.
  • Let the cookies cool completely before eating them. This will help them to firm up and develop their full flavor.

Conclusion:

These low-carb chocolate chip cookies are a delicious and satisfying treat that you can enjoy without guilt. They're perfect for a snack or dessert, and they're also great to take on the go. So next time you're craving something sweet, reach for a low-carb chocolate chip cookie instead of a high-carb alternative. Your body will thank you!
