Time 23m

Yield 1 8" x 8" pan

Number Of Ingredients 8

5/8 cup unsalted grass-fed butter
3/4 cup dark unsweetened cocoa
3/4 cup sugar alcohol (xylitol)
2 large eggs, at room temperature
1/2 cup plus 2 tablespoons almond flour
1 1/4 cups walnuts, lightly chopped
1 teaspoon vanilla extract
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease an 8" x 8" cake pan with nonstick cooking spray and line with parchment, leaving a 2-inch overhang on all sides. Grease parchment.
  • Fill a medium pot with 2 inches of water and bring to a brisk simmer. Into a bowl that fits snuggly on top of the pot, combine butter, cocoa powder, and xylitol. Cook, stirring frequently, until butter is melted and xylitol is dissolved. Whisk until smooth. Remove from heat and add eggs, almond flour, walnuts, vanilla, and salt. Stir to combine. Transfer to prepared pan and smooth top.
  • Transfer to oven and bake until a toothpick inserted into the center comes out nearly clean, about 15 minutes. Note that the brownies will still look slightly underdone. For a truly fudgy texture be careful not to overbake! Remove from oven and let cool on a rack. Remove from pan and cut into squares.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the brownies will be. Look for chocolate with a cocoa content of at least 70%.
  • Don't overmix the batter. Overmixing will make the brownies tough. Mix just until the ingredients are combined.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached. Overbaking will make the brownies dry.
  • Let the brownies cool completely before cutting them. This will help them to hold their shape.
  • Serve the brownies with your favorite toppings. Some popular options include ice cream, whipped cream, or chocolate sauce.

Conclusion:

These low-carb double chocolate walnut brownies are a delicious and satisfying treat that can be enjoyed by people on a low-carb diet. They are easy to make and can be customized to your liking. So next time you are craving something sweet, give this recipe a try!
