Time 20m

Yield 16 cookies, 16 serving(s)

Number Of Ingredients 4

1 cup peanut butter
1 cup sugar substitute
1 egg
1 teaspoon vanilla

Steps:

  • mix ingredients in a small bowl.
  • drop by rounded teaspoons onto cookie sheet.
  • bake at 350 degrees for 12 minutes or until set.

Tips:

  • Choose the right peanut butter. Use a natural, unsweetened peanut butter without added oils or sugars.
  • Use flax meal instead of flour. Flax meal is a good source of fiber and omega-3 fatty acids. It also helps to bind the cookies together.
  • Add sweetener to taste. The amount of sweetener you add will depend on your personal preference. You can use honey, maple syrup, or a sugar substitute.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are golden brown. The cookies should be slightly soft in the center when they are done.

Conclusion:

These low-carb peanut butter flax cookies are a delicious and healthy snack. They are easy to make and can be customized to your liking. With their combination of peanut butter, flax meal, and sweetener, these cookies are a good source of protein, fiber, and omega-3 fatty acids. They are also gluten-free and grain-free, making them a good option for people with dietary restrictions.
