I made Secret's Apple Bread, but I made so many changes that I decided to post it as a separate recipe! This bread is very moist and does not suffer from having the fat removed. It is a chunky homey sort of bread that is high in fiber too! Also makes fantastic muffins or mini-muffins.

1 1/2 cups plain flour
1 1/2 cups whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 egg
4 egg whites
1 1/2 cups sugar
1 cup applesauce (unsweetened)
1 tablespoon vanilla essence
3 diced apples, with skins (granny smith or similar)

Steps:

  • Mix the flours, cinnamon, baking soda, salt and baking powder together in a medium bowl.
  • In a large bowl beat the egg and whites, sugar, applesauce and vanilla.
  • Stir in the dry ingredients, followed by the apples.
  • Stir until just combined.
  • I baked this in a slightly larger than normal, lightly greased, loaf pan and had enough mix left over for 8 mini-muffins.
  • This mix makes great muffins as well as the apple bread.
  • Cook muffins for about 20-30 minutes or until done in a 350 degree oven.
  • Bake the loaf for 1 hour in a 350 degree oven.

3 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 cups sugar
1 1/2 cups Splenda granular, sugar substitute
1 (15 ounce) can pumpkin puree
4 large eggs
1 1/2 cups applesauce
1/2 cup apple juice (or water)

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour two 9X5 inch loaf pans.
  • Combine flour, cinnamon, baking soda, and salt in large bowl.
  • Combine sugar, splenda, pumpkin, eggs, applesauce and apple juice in large mixer bowl; beat until blended.
  • Add pumpkin mixture to flour mixture; stir just until moistened.
  • Spoon batter into loaf pans.
  • Bake until toothpick inserted in center comes out clean, about 60-70 minutes.
  • Cool in pans for 10 minutes then remove to wire racks and cool completely -- or eat warm.
  • Makes about 2 1/2 dozen muffins if done that way.

1 cup applesauce (chunky or smooth)
3 eggs
2 cups sugar (if using sweetened applesauce, use only 1-1/2 cups of sugar, for a less sweet taste)
1 -2 teaspoon vanilla
3 cups apples (shredded or finely diced)
3 cups flour
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups nuts (chopped) (optional)

Steps:

  • Set oven to 325 degrees F.
  • Set oven rack to second-lowest position.
  • Grease two 9 x 5-in loaf pans or use mini loaf pans.
  • Grate the apples; set aside, cover with plastic wrap to prevent browning.
  • In a large bowl, combine the applesauce, eggs, sugar and vanilla.
  • Sift togethe the flour, cinnamon, baking soda and salt.
  • By hand mixing with a wooden spoon mix the dry ingredients to the applesauce mixture.
  • Add in the shredded apples and the nuts (if using).
  • Transfer mixture to the prepared loaf pans.
  • Bake for 75 mins or until loaf breads test done.
  • Sprinkle with sugar if desired before slicing loafs.
  • If desired you may replace the applesauce with 1 cup of vegetable or canola oil, but will increase the fat!

This is probably my favorite recipe to make around the holidays for two reasons; 1- it's super yummy, 2- a serving is only 2 points with WW Freestyle! Yep! 2 points. That's it! Oh yeah, and even my 4 year old twins are in love with this! I brought it to Thanksgiving and didn't tell anyone it was sugar free and they inhaled it!...

3 egg whites
2 3/4 c self rising flour
1/2 c unsweetened almond milk
3/4 c nonfat plain greek yogurt (i use fage total 0%)
1 c granular no calorie sweetener (i use hyvee delecta but there's plenty of brands like swerve and truvia)
1 Tbsp pure vanilla extract
1 c fresh cranberries (chopped)
2 medium apples (diced) (i used red delicious)
3/4 tsp baking soda
1 Tbsp country crock, melted
2 Tbsp orange zest
1 tsp lemon juice

Steps:

  • 1. Preheat oven to 375 Line bread pan with parchment paper
  • 2. Dice your apples and place in a small bowl and toss with lemon juice. Set aside.
  • 3. In a small bowl combine flour and baking soda. Set aside.
  • 4. In a large bowl whisk together egg whites and melted country crock (make sure it's not still hot!). Bubbles and/or fluffiness is a plus!
  • 5. Whisk in sweetener and vanilla until well incorporated.
  • 6. Whisk in yogurt until smooth.
  • 7. Lightly stir in orange zest. You can also add in a few dashes of cinnamon if you'd like.
  • 8. Stir in 1/3 of flour mixture, then half the milk (1/4 c), then 1/3 flour, last of milk, finishing with the last of the flour. Stir until just incorporated.
  • 9. Gently fold in the cranberries and apples.
  • 10. Pour into bread pan and bake in oven for 45-55 minutes. A knife inserted in the center will come out mostly clean.
  • 11. Once out of the oven let it sit in the pan for about 10 minutes and then lift out and place on a cooling rack.

Tips:

  • Use ripe apples. They'll be sweeter and have a more intense flavor.
  • Peel and core the apples before grating them. This will help to prevent the bread from being too chunky.
  • Use a combination of all-purpose flour and whole wheat flour. This will give the bread a nice texture and flavor.
