1/4 cup skim milk
1 teaspoon safflower oil
1 cup unsweetened applesauce
1/4 cup egg substitute or 1 egg
1 tablespoon instant coffee, dissolved in
1 tablespoon water
1/4 cup unsweetened cocoa
1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 400.
  • Spray 14 muffin cups with cooking spray.
  • In medium bowl combine milk, oil, applesauce, egg & coffee mixture.
  • Combine remaining ingredients in a large bowl.
  • Add the wet ingredients to dry mixture & mix until combined.
  • Fill muffin tins 1/2-3/4 full.
  • Bake 30-40 minutes, until toothpick inserted into center comes out clean.

1 cup margarine
1 ¼ cups white sugar
1 egg
3 ripe bananas
1 tablespoon instant coffee granules, dissolved in
1 tablespoon water
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Blend butter or margarine, sugar, egg, banana, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into 15 to 18 paper-lined muffin cups.

3/4 cup sugar
1/4 cup baking cocoa
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup fat-free vanilla yogurt
2/3 cup fat-free milk
1/2 teaspoon vanilla extract
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine the first six ingredients. Stir in the yogurt, milk and vanilla just until moistened. Coat muffin cups with cooking spray; fill two-thirds full. , Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. 1 tablespoon instant coffee granules or crystals
1 egg
1 cup semisweet chocolate chunks or chips

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line muffin cups with paper baking cups.

  • Preheat oven to 400F.
  • Coat a 12-hole muffin tin with cooking spray.
  • Whisk together the flour, baking powder, and salt in a medium bowl.
  • Set aside Separate the egg, placing the whites in a medium bowl and the yolk in a large bowl.
  • Set the whites aside.
  • Add the brown sugar, applesauce, oil and vanilla to the yolk.
