GREEN GODDESS DRESSING (LOW FAT)

Green Goddess Dressing (Low Fat) image

This Bon Appétit Magazine recipe (March 2002) packs a lot of flavour but is very low in calories. It is great on green salads, sliced tomatoes, hard-boiled eggs, or as a dip. You can substitute the yogurt for nonfat sour cream. Makes about 1 1/4 cups. (Can be prepared 3 days ahead. Cover and refrigerate.)

Time 10m

Yield 20 serving(s)

Number Of Ingredients 9

1 cup packed arugula or 1 cup watercress leaf
3/4 cup plain nonfat yogurt (or more)
1/3 cup low-fat mayonnaise
2 tablespoons packed fresh dill, chopped
2 tablespoons packed fresh basil, chopped
2 tablespoons green onions, chopped
1 tablespoon packed of fresh mint, chopped
1 teaspoon red wine vinegar
1/4 teaspoon hot pepper sauce (optional)

Steps:

  • Cook arugula or watercress in medium saucepan of boiling water 30 seconds. Drain. Rinse under cold water. Drain again. Pat dry with paper towels.
  • Transfer arugula or watercress to blender. Add 3/4 cup plain nonfat yogurt and all remaining ingredients and puree until smooth, thinning with more yogurt or water, if desired.
  • Transfer dressing to bowl. Season dressing to taste with salt and pepper.

Tips:

  • Less butter, more flavor: Use half the amount of butter called for in the original recipe and add in some flavorful ingredients like garlic, shallots, or herbs to make up for the loss of richness.
  • Lighten up the cream: Instead of using heavy cream, opt for lighter options like milk, low-fat milk, or even yogurt. You can also use a combination of milk and cornstarch to create a creamy sauce without the added fat.
  • Add vegetables: Vegetables like mushrooms, zucchini, or spinach are great ways to add bulk and nutrients to your sauce without adding a lot of calories. You can also use pureed vegetables to create a creamy, flavorful sauce.
  • Use spices and herbs: Spices and herbs are great ways to add flavor to your sauce without adding calories. Experiment with different combinations to find your favorite flavors.
  • Thicken with cornstarch: If you want a thicker sauce, use a cornstarch slurry (equal parts cornstarch and water) to thicken it up. This will help you avoid using too much butter or cream.

Conclusion:

With a few simple swaps and substitutions, you can easily make a lower-calorie version of IKEA's Graddsas Cream Sauce. This delicious sauce is perfect for serving with Swedish meatballs, chicken, or fish. So next time you're craving a creamy, flavorful sauce, give this recipe a try!
