1 tablespoon vegetable oil
1 yellow onion
1 large stalk celery, finely chopped
1 large carrot, finely chopped
salt to taste
2 pounds ground pork
1 tablespoon minced fresh garlic
1 teaspoon red pepper flakes
1 teaspoon garlic powder
½ teaspoon ground turmeric
½ teaspoon ground ginger
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon celery seed
2 (16 ounce) packages lumpia wrappers
1 quart vegetable oil for frying

Steps:

  • Heat 1 tablespoon vegetable oil in a large skillet over medium-low heat; cook and stir onion, celery, and carrot until onion is tender and translucent, 5 to 7 minutes. Celery and carrot may still be crisp; season with salt. Add ground pork and garlic. Continue to cook and stir until pork is no longer pink. Season with more salt. Drain any excess grease and stir in red pepper flakes, garlic powder, turmeric, ginger, cumin, coriander, and celery seed. Set aside to cool.
  • Place about 1 tablespoon pork mixture on a lumpia wrapper with one corner facing you. Fold corner closest to you over filling; fold two side corners toward center and continue rolling wrapper around pork. Brush a small amount of water over the top corner and press to seal. Repeat with remaining filling and wrappers.
  • Heat 1 quart vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fry rolls in batches until golden brown, 4 to 6 minutes. Drain on a paper towel-lined plate.

Time 1h10m

Yield 15

Number Of Ingredients 13

1 tablespoon vegetable oil
1 pound ground pork
2 cloves garlic, crushed
½ cup chopped onion
½ cup minced carrots
½ cup chopped green onions
½ cup thinly sliced green cabbage
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon soy sauce
30 lumpia wrappers
2 cups vegetable oil for frying

Steps:

  • Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil. Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
  • Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
  • Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

Tips:

  • Use fresh ingredients whenever possible. Fresh vegetables, herbs, and meat will give your lumpia mollica the best flavor.
  • Don't overcook the lumpia mollica. The filling should be cooked through, but the wrapper should still be slightly crispy.
  • Serve the lumpia mollica with a dipping sauce. A simple soy sauce-based dipping sauce is a classic choice, but you can also experiment with other sauces, such as sweet and sour sauce or chili sauce.
  • Make sure the lumpia wrapper is not too thick. The wrapper should be thick enough to hold the filling, but not so thick that it overpowers the flavor of the filling.
  • Use a variety of vegetables in the filling. This will give the lumpia mollica a more complex flavor and texture.
  • Use a light touch when frying the lumpia mollica. This will help to prevent the wrapper from becoming too crispy.

Conclusion:

Lumpia mollica is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. With its crispy wrapper and flavorful filling, it's sure to be a hit with your family and friends. So next time you're looking for a new and exciting dish to try, give lumpia mollica a try!
