1 large apple, peeled and chopped
2 tablespoons butter, melted
4 eggs, beaten
2 cups low-fat milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8-inch square baking dish. Mix in raisins and apple. Drizzle with melted butter.

2 1/4 cups 1% low-fat milk
1 1/2 cups Splenda granular (splenda no calorie artificial sweetener)
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
5 cups French bread, day old in 1 inch cubes
1/2 cup raisins

Steps:

  • Preheat oven to 350°F.
  • Whisk together eggs, milk, Splenda® Granular, cinnamon, and vanilla in a large bowl. Gently stir in bread cubes and raisins. Pour mixture into a 1 1/2-quart ungreased baking dish.
  • Bake 40 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before serving.

2 cups fresh blueberries
3 tablespoons powdered sugar
For the Lemon Sauce:
1 1/2 cups water
3/4 cup granulated sugar
1 1/2 tablespoons cornstarch
Dash salt
1 tablespoon finely grated lemon zest
3 tablespoons fresh lemon juice
1 tablespoon butter

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Butter an 11-by-7-inch baking dish.
  • Whisk together the milk, eggs, sugar, vanilla and almond flavorings and 1/2 teaspoon of lemon zest in a large bowl.

1 cup packed brown sugar

  • Melt butter or margarine.

Rum Sauce:
½ C. sugar
2 T. reduced-fat margarine
2 T. flour
1 C. skim milk
¼ C. dark rum

Steps:

  • For the pudding: In a large bowl, combine all ingredients except bread. Add bread, stirring gently and let stand in the refrigerator for 1 hour. Preheat oven to 350°. Spoon pudding into a 10x7 inch baking dish coated with cooking spray. Bake for 35 minutes. Serve with Rum Sauce. For the Rum Sauce: Combine sugar and margarine in a small saucepan. Stir over medium heat until margarine melts. Add flour. Cook for 1 minute, whisking constantly. Gradually add milk and cook for 4 more minutes, continuing to whisk constantly. ½ cup light brown sugar
1 tablespoon all-purpose flour
1 pinch ground cinnamon
