Steps:
- 1. In a blender, combine the lemongrass with 3 cups water and puree until mostly smooth. (Lemongrass is very fibrous, so you will not get to a completely uniform consistency; that's okay.) Transfer the puree to a saucepan and bring to a simmer over medium heat. Remove from the heat, cover, and let the liquid infuse for 15 to 20 minutes. Strain the syrup into a bowl, pressing on the solids; discard the solids in the strainer. You should wind up with about 2 cups of strained "lemongrass tea"; be sure to measure out your final yield.
- 2. In a medium saucepan, combine the "lemongrass tea" with the same amount (by volume) of sugar. So, if you wind up with 2 cups tea, you will add 2 cups (400 grams) sugar. Stir the mixture over medium-high heat until all the sugar has dissolved and the syrup comes to a simmer. Remove from the heat and let cool completely.
- 3. Transfer the cooled syrup to a quart-size container and stir in the ginger juice and lime juice. Cover and refrigerate the sorbet base until completely cold, at least 3 hours.
- 4. Pour the chilled sorbet base into an ice cream maker and freeze according to the manufacturer's instructions. Place the container in which you refrigerated the sorbet base in the freezer so you can use it to store the finished sorbet. Churn the sorbet until it resembles Italian ice. Transfer the sorbet to the chilled storage container and freeze until hardened to your desired consistency. The sorbet will keep, frozen, for up to 7 days.

LYCHEE SORBET
Posting this for ZWT II 2006 Asia, as taken from "The Ultimate Ice Cream Book". Canned Lychees are available in many supermarkets or almost any Asian Grocery. If you can't find them, stop by you rlocal Chinese restaurant and ask them to sell you a quart or two to go. Sometimes instead of using the ice cream machine, I will put the sorbet mixture into a freezer safe container, put it in the freezer overnight and serve the next day after taking it out 15 minutes ahead of time. It scoops out nicely at that time.

Steps:
- Drain the lychees, reserving the syrup. Puree the lychees with 1/4 cup reserved syrup in a blender or food processor until smooth, about 20 seconds, Pour through a sieve, scraping with a whisk or wooden spoon to push as much of the fruit through as you can. Set aside.
- Combine the sugar and water in a small saucepan and place over low heat. Stir until the sugar dissolves completely. Raise heat and boil the syrup 1 minute. Remove from the heat.
- In a medium mixing bowl lightly beat the egg whites with a whisk or an electric beater util foamy, about 10 seconds. Slowly beat in the hot sugar syrup. Continue to beat until the meringue cools down slightly. Add the lychee puree. Cover and refrigerate until cold or overnight. The mixture will have foam on top, but will incorporate into the sorbet when it freezes.
- Stir the chilled mixture, then freeze in your ice cream machine according to the manufactures instructions. When finished, the sorbet will be soft but ready to eat. For firmer sorbet transfer to a freezer safe container, and freeze at least 2 hours.

Tips:
- Mise en place: Before you start, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid any mishaps.
- Use ripe lychees: The riper the lychees, the sweeter and more flavorful your sorbet will be. Look for lychees that are plump and have a deep red color.
- Use fresh lemongrass: Fresh lemongrass will give your sorbet a bright, citrusy flavor. If you can't find fresh lemongrass, you can use dried lemongrass, but be sure to soak it in hot water for at least 30 minutes before using.
- Chill your ingredients: Chilling your ingredients before you make the sorbet will help it freeze more quickly and smoothly.
- Use an ice cream maker: An ice cream maker is the best way to make sorbet. It will churn the sorbet until it is smooth and creamy.
- Don't over-churn the sorbet: If you over-churn the sorbet, it will become icy and grainy. Churn the sorbet just until it is thick and creamy.
- Serve the sorbet immediately: Sorbet is best served immediately after it is made. If you need to store it, place it in an airtight container in the freezer for up to 2 weeks.
Conclusion:
Lychee and lemongrass sorbet is a refreshing and delicious dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages.
