  • For the mac and cheese: Preheat the oven to 425 degrees F.

3 garlic cloves, minced
1 green pepper, chopped and divided

2 eggs, beaten
1/4 cup grated parmesan cheese
1 cup grated mozzarella cheese
1 tomatoes, sliced

It's easy, it's fun, and I have yet to see a kid, (or adult for that matter!), that hasn't like this recipe... We switch up on toppings, but pepperoni always seems to be the favorite. Also, adjust the amount of sauce and cheese to your liking. My father still makes this for himself by just cutting all the ingredient amounts in half and cooking in a 9 x 9 inch baking dish. 3 1/2 cups uncooked elbow macaroni (16 oz)
1 lb bulk mild or spicy pork sausage
1 large green bell pepper, chopped
1 large onion, chopped (1 cup)
1/3 cup butter or margarine
1/3 cup all-purpose flour
1 teaspoon salt
1 1/2 teaspoons crushed red pepper flakes
2 cups milk
3/4 cup water
4 cups shredded white Cheddar cheese (16 oz)
1 1/2 cups shredded mozzarella cheese (6 oz)
1/2 cup grated Parmesan cheese
20 slices pepperoni (from 3-oz package)
Small fresh basil leaves, if desired

Steps:

  • Heat oven to 425°F. Spray 3-quart casserole with cooking spray. Cook and drain macaroni as directed on package. In 12-inch nonstick skillet, cook sausage over medium-high heat until no longer pink; drain. In same skillet, cook bell pepper and onion 5 minutes or until crisp-tender.
  • In 4-quart saucepan, melt butter over medium-low heat. Stir in flour, salt and 1/2 teaspoon of the pepper flakes. Cook and stir until smooth. Gradually add milk and water, stirring constantly until thickened. Gradually add Cheddar cheese; stir until melted. Add macaroni, sausage and onion mixture; toss to coat. Spoon into casserole. Sprinkle with mozzarella cheese. Bake uncovered 30 minutes or until bubbly. Top with Parmesan cheese, pepperoni and remaining 1 teaspoon pepper flakes. Bake 2 to 4 minutes longer, or until lightly browned. Garnish with basil.

I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  • In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
  • Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
  • Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.

1/2 lb bulk pork sausage
1/4 cup chopped green pepper
2 tablespoons chopped onions
1/2 cup elbow macaroni, cooked and drained
1 (8 ounce) can tomato sauce
4 tablespoons grated parmesan cheese, divided
2 tablespoons water
1/4 teaspoon dried oregano
1 dash pepper

Steps:

  • In a skillet cook sausage, green pepper and onion over medium heat until meat is no longer pink, drain.
  • Stir in the cooked macaroni, tomato sauce, 2 T Parmesan cheese, water, oregano, and pepper.
  • Transfer to a lightly greased 1-qt. (or larger) baking dish. Sprinkle with remaining cheese. Cover and bake for 25-30 minutes or until liquyid is absorbed and casserole is heated through.
  • Use larger casserole dish for 4 servings, etc.
