- Stir together strawberries and sugar in a medium bowl. Let stand at room temperature until juices are released, at least 30 minutes.
BUTTERMILK PANNA COTTA WITH MACERATED STRAWBERRIES

- For the panna cotta: Soften gelatin in cold water until it is the consistency of plastic wrap (approximately 5 minutes). Combine cream and sugar, and bring to scald. Remove from the heat; add softened gelatin, which has been squeezed dry of all excess water. Add buttermilk. Pass through a fine mesh strainer. Divide among ramekins. Refrigerate until set (approximately 4 hours).
- For the strawberries: Combine strawberries and sugar and macerate for approximately 1/2 hour. Afterward, strain the strawberries, reserving the juice and macerated berries separately.
- Serve panna cotta topped with strawberry liquid spooned on top and with macerated strawberries.

- Make cake:
- Put oven rack in middle position and preheat oven to 350°F.
- Whisk together matzo cake meal, potato starch, and salt in a bowl. Stir together wine and lemon juice in another bowl or a glass measure.
- Beat yolks in a large bowl with an electric mixer at medium-high speed until smooth, then add zest. Add 1 cup sugar gradually, beating, and beat until mixture is very thick and pale, 2 to 3 minutes.
- With mixer at low speed, add half of matzo cake meal mixture to yolks, then all of wine mixture. Add remaining matzo meal mixture, mixing until just combined.
- Beat whites with a pinch of salt in another bowl with cleaned beaters at medium speed until they hold soft peaks. Add remaining 1/4 cup sugar a little at a time, beating, and beat until whites just hold stiff peaks. Fold one fourth of whites into yolk mixture to lighten, then fold in remaining whites gently but thoroughly.
- Pour batter into ungreased tube pan and rap pan firmly three times on work surface to eliminate any large air bubbles.
- Bake spongecake until top is golden and springs back when it is pressed gently, 35 to 40 minutes. Immediately turn pan upside down on a rack and cool completely, about 1 hour. Run a knife around inner and outer edges of cake to loosen, then remove from pan.
- Macerate strawberries:
- While cake cools, gently stir together strawberries, wine, and sugar until sugar is dissolved, then let stand at least 30 minutes.
- Dust cake with Passover confectioners sugar and serve with strawberries.
BALSAMIC MACERATED STRAWBERRIES

- 1. In a large bowl, combine the sugar and vinegar. Let sit for a few minutes to allow the sugar to dissolve.
- 2. Gently toss strawberries with the sugar and vinegar. Let sit at room temperature until the strawberries have released their juices but are not yet mushy, about 30 minutes. Do not let them sit more than 90 minutes.
- 3. Immediately prior to serving, stack the basil leaves on a cutting board, roll them vertically into a loose cigar shape and thinly slice very thinly across the roll to make a fine chiffonade of basil. This will be easy if you use a very sharp chef's knife.
- 4. Divide strawberries and their juices among four small bowls and scatter each portion with the basil. Top with whipped cream if desired.
MACERATED STRAWBERRIES W/ MASCARPONE WHIPPED CREAM

- In a mixing bowl, stir together the strawberries and sugar. Set aside, and let sit for at least 10 minutes. Meanwhile, using a hand-mixer or stand-up mixer with the whisk attachment, on medium speed, blend together the mascarpone cheese and 1 tbsp of the powdered sugar until light and fluffy. Spoon into a separate bowl and set aside. Pour the cream and the remaining sugar into the original mixing bowl and blend on high-speed just until stiff peaks form, about a minute or two. Turn the mixer off and carefully fold the whipped cream into the mascarpone mixture. Add the lemon zest and gently stir to combine. Divide the strawberries among four small plates or bowls and top with the mascarpone cream and a sprinkle of fresh mint. Serve immediately. Notes The longer the strawberries and sugar sit, the more juices will be extracted. If you have time, the strawberries can be prepared in advance and sit up to a day soaking in the refrigerator.
