1 kg of sliced cabbage (2 pounds)
100 gr sliced carrot (2 cups)
100 gr sliced pepper (one large)
1 tbsp salt
2 tbsp sugar
4 tbsp white vinegar
4 tbsp vegetable oil
200-250 ml. hot water (as needed)

Steps:

  • Thinly chop or slice the cabbage, carrots, and pepper.
  • Add salt and sugar and mix well.
  • Combine hot water, oil, and vinegar and pour over the vegetables.
  • Mix together and let sit for a bit at room temperature.
  • Fill the coleslaw into jars or airtight containers
  • Refrigerate overnight. Taste best after 24 hours.

1 large head cabbage, shredded (about 20 cups)
2 large onions, thinly sliced
2 celery ribs, thinly sliced

1 jar (4 ounces) diced pimientos, drained
1-1/2 cups sugar
1-1/2 cups vinegar
1/2 cup vegetable oil

3 medium carrots, coarsely grated on a box grater
1 tablespoon apple cider vinegar
1 tablespoon mayonnaise
1 tablespoon chopped chives
1 tablespoon chopped fresh flat-leaf parsley
1/4 teaspoon caraway seeds, lightly crushed with the side of a knife
Kosher salt and freshly ground black pepper
8 slices Russian rye bread
Spicy brown mustard, as needed
12 ounces thinly sliced oven-roasted turkey
6 ounces sliced Swiss cheese
About 1/3 cup dill pickle chips

Steps:

  • For the carrot slaw: Mix the grated carrots with the vinegar, mayonnaise, chives, parsley, caraway, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl.
  • For the sandwiches: Lightly toast the bread. Prop the bread against something and let it cool upright so that the steam does not make it soggy.
  • Lay out the bread and generously slather with mustard. Divide the turkey equally among 4 slices of the bread and the cheese evenly among the remaining 4 slices. In it, a tangy buttermilk- and avocado-spiked green goddess dressing takes the place of the usual mayonnaise mix, for a slaw that's both lighter and fresher tasting. Like most coleslaws, it gets better as it sits so, if you have time, plan to make it a few hours ahead. Save any extra dressing to use as a dip for cut vegetables or for other salads. It will keep for up to two days in the fridge.

  • Make the dressing: Put avocado, buttermilk, lemon juice, anchovy, scallions, garlic, parsley, chives, tarragon, olive oil and basil in a food processor or blender, and process until smooth and uniformly green, 1 to 2 minutes. Taste and season with salt and black pepper. Set aside.
  • Make the slaw: In a large bowl, combine cabbage, scallions, jalapeño and cilantro. Pour 1 cup of green goddess dressing over slaw and toss well to coat. Season with salt and pepper.
  • Garnish with more cilantro before serving. Serve immediately, or cover with plastic wrap and refrigerate for a couple of hours. Toss again before serving, adding more dressing if you like. Leftover dressing will keep for another day or two in the fridge.
