BROCCOLI SALAD WITH MANDARIN ORANGES AND CASHEWS
A colorful and attractive salad with just the right combination of flavors--we especially love the tanginess from the cider vinegar. Fantastic! I sometimes replace the cashews with roasted sunflower seeds, and the mandarin oranges with raisins--it's great either way! Best made a day ahead of serving.

I write a food column for our local newspaper, and I consider myself a pretty good judge of recipes. But I'll admit I was surprised by this one-I didn't think the usual ingredients would go together as well as they do. -Connie Blommers, Pella, Iowa

BROCCOLI SALAD W/ RAISINS AND MANDARIN ORANGES
our Grocery store makes a version of this salad but they use the bagged precut broccoli so the gas they use to preserve the broccoli makes a sulfur smell so I decided to do it myself. You can use any nuts but cashews or sunflower seeds are my favorites I've found.

Steps:
- 1. Cook broccoli (if you are cooking it, just rinse and drain if you are using raw broccoli), run under cold water until completely cooled then place on paper towels to remove all excess water.
- 2. Cook bacon and set aside on paper towels to cool and drain.
- 3. Chop broccoli, red onion, water chestnuts and Bacon, add chopped items and the rest of the salad ingredients to a large bowl.
- 4. prepare dressing in a small bowl and toss with ingredients in the large bowl. (you can serve this right away but it is best after sitting for about 30 minutes to let the flavors meld)
Tips:
- Choose the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or brown florets, as this indicates that it is old and past its prime.
- Cut the broccoli into bite-sized pieces: This will help to ensure that the broccoli cooks evenly and absorbs the flavors of the dressing.
- Blanch the broccoli: Blanching the broccoli in boiling water for a few minutes helps to preserve its bright green color and crisp texture.
- Make the dressing ahead of time: The dressing for this salad can be made up to a day in advance. This will give the flavors time to meld and develop.
- Use a variety of nuts and seeds: This salad is a great way to use up leftover nuts and seeds. Try using a combination of almonds, walnuts, pecans, sunflower seeds, and pumpkin seeds.
- Serve the salad immediately: This salad is best served immediately after it is made. The broccoli will start to lose its crispness if it sits for too long.
Conclusion:
This Mandarin Broccoli Salad is a delicious and refreshing salad that is perfect for a light lunch or dinner. It is also a great way to get your daily dose of fruits and vegetables. The salad is easy to make and can be tailored to your own personal preferences. So next time you are looking for a healthy and flavorful salad, give this Mandarin Broccoli Salad a try!
