1/2 cup red onion, finely chopped
1/2 lb bacon, cooked and crumbled

1/2 cup canned mandarin orange segments, chopped and drained (or raisins)
1 1/4 cups grated mozzarella cheese (optional)
3 tablespoons cider vinegar
2 tablespoons vegetable oil
3/4 cup good quality mayonnaise (such as Hellman's or Best Foods)
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper

1/2 cups sugar
1-1/2 teaspoons cornstarch
1 teaspoon ground mustard
1/4 cup white vinegar
1/4 cup water
1 large egg plus 1 large egg yolk, lightly beaten
1/2 cup mayonnaise
3 tablespoons butter, softened
SALAD:
4 cups fresh broccoli florets, 1-inch cuts
2 cups sliced fresh mushrooms
1/2 medium red onion, sliced in 1/8-inch-thick rings
1 can (11 ounces) mandarin oranges, drained
6 slices bacon, cooked and crumbled
1/2 cup slivered almonds, toasted
1/2 cup golden raisins

Steps:

  • In a large saucepan, combine the sugar, cornstarch and mustard. Combine vinegar and water. Stir into sugar mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg and yolk; return all to pan, stirring constantly. 1 tablespoon sliced almonds
1 (11 ounce) can mandarin orange sections, well drained
1/2 orange, juice and zest of
2 green onions, chopped
1 1/2 tablespoons white vinegar
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1 tablespoon olive oil

Steps:

  • Steam broccoli in covered saucepan for 3 minutes.
  • Remove from heat and rinse with cold running water.

1/2 cup sugar
1 teaspoon cornstarch
1 teaspoon dry mustard
1/4 cup white wine vinegar
1/4 cup water
1/2 cup mayonnaise
4 cups fresh broccoli florets
1/2 cup raisins
8 slices bacon, cooked and chopped
2 cups mushrooms, sliced
10 ounces mandarin oranges, drained
1/2 red onion, sliced

Steps:

our Grocery store makes a version of this salad but they use the bagged precut broccoli so the gas they use to preserve the broccoli makes a sulfur smell so I decided to do it myself. You can use any nuts but cashews or sunflower seeds are my favorites I've found.

2 broccoli crowns (cooked al dente or you can use raw if you prefer)
1/2 c golden raisins
1/2 c red onion finely diced
1 small can of mandarin oranges
8 oz water chestnuts (drained and diced) *optional
8 slice crispy bacon
1 c nuts (sunflower seeds, cashews or pecans)
DRESSING;
1 c mayonaise
2 Tbsp apple cider vinegar
1 Tbsp sugar *optional

Steps:

  • 1. Cook broccoli (if you are cooking it, just rinse and drain if you are using raw broccoli), run under cold water until completely cooled then place on paper towels to remove all excess water.
  • 2. Cook bacon and set aside on paper towels to cool and drain.
  • 3. Chop broccoli, red onion, water chestnuts and Bacon, add chopped items and the rest of the salad ingredients to a large bowl.
  • 4. prepare dressing in a small bowl and toss with ingredients in the large bowl. (you can serve this right away but it is best after sitting for about 30 minutes to let the flavors meld)
