1/2 teaspoon Chinese five-spice powder
1/4 cup granulated sugar
4 (17- by 12-inch) phyllo sheets, thawed
3 tablespoons unsalted butter, melted
8 ounces cream cheese, softened
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon vanilla
2 (11-ounce) cans mandarin oranges in light syrup, drained and syrup reserved
Confectioners sugar for dusting

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Whisk together five-spice powder and 2 tablespoons granulated sugar in a small bowl.
  • Cover phyllo with overlapping sheets of plastic wrap and a dampened kitchen towel. Arrange 1 phyllo sheet on a large baking sheet, then brush with some butter and sprinkle with one third of spiced sugar. Make 2 more layers in same manner. Top with remaining phyllo sheet and brush with remaining butter. (For a corrugated look, invert a large rectangular cooling rack and place it on top of phyllo.)
  • Bake until golden, 12 to 15 minutes. Carefully remove cooling rack (if using) and transfer phyllo (in 1 piece) with 2 metal spatulas to another rack to cool.
  • While phyllo cools, blend together cream cheese, lemon juice, vanilla, 2 tablespoons reserved orange syrup (discard remainder), and remaining 2 tablespoons granulated sugar in a food processor until smooth. Transfer to a bowl and fold in oranges.
  • Break phyllo with your hands or cut with a serrated knife into 12 pieces. Arrange 1 piece of phyllo on a plate and top with a dollop of orange cream. Repeat layering and top with another piece of phyllo. Make 3 more napoleons in same manner. Dust with confectioners sugar.

2 tablespoons granulated sugar
1 cup whipped nondairy dessert topping or whipped cream
1 (11-ounce) can mandarin oranges in light syrup, drained
1 tablespoon confectioners' sugar

Steps:

  • Preheat the oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Arrange the wonton wrappers on the sheet and spray them with cooking spray. Sprinkle them evenly with the granulated sugar, and then bake until golden brown, about 5 minutes.

Then we dollop the filling between juicy orange rounds and garnish with crunchy pistachios.

4 medium navel oranges (2 to 2 1/4 pounds), zest of 1orange grated and reserved
2 tablespoons honey
1 cup nonfat Greek yogurt
1 teaspoon orange-flower water
1/4 cup shelled raw pistachios

Steps:

  • Cut off about 1 inch from both ends of all 4 oranges; reserve the ends. Stand 1 orange cut-side down on a cutting board. Working from top to bottom, cut away the peel and pith. Cut the orange into 3 rounds, each about 3/4-inch-thick, transferring the rounds to a medium bowl as you work. Repeat with the remaining oranges. Refrigerate the slices until needed.
  • Squeeze the juice from the reserved orange ends into a small saucepan. Add the orange zest, honey and any remaining juice from your cutting board, and bring to a boil over medium-high heat. Boil, swirling the pot occasionally, until syrupy, about 6 minutes. Toward the end, the surface will be covered with big brownish bubbles. You should have about 1/4 cup of syrup. Let cool to room temperature, about 25 minutes.
  • Meanwhile, heat a small skillet over medium heat, add the pistachios and cook, tossing frequently until fragrant and toasted, about 4 minutes. Let cool, then chop.
  • Whisk together the yogurt, half the syrup and the orange-blossom water in a medium bowl.
  • In each of 4 shallow bowls, layer 3 orange slices with 1 tablespoon of the yogurt mixture, beginning with an orange slice and ending with yogurt. Drizzle the remaining orange syrup over the tops, sprinkle with pistachios and serve.

1/4 cup finely chopped onion
1 can (11 ounces) mandarin oranges, drained
FRIED TOMATOES:
1 large egg, lightly beaten
Dash hot pepper sauce, or to taste
1/4 cup all-purpose flour
1 cup dry bread crumbs
2 medium green tomatoes, cut into 4 slices each
Oil for frying
1/2 teaspoon salt
1/4 teaspoon pepper
TOPPINGS:
1/2 cup pimiento cheese spread
4 teaspoons pepper jelly

  • Combine first six ingredients. Add coleslaw mix and onion. Add mandarin oranges; stir carefully., In a shallow bowl, whisk egg and hot sauce. Place flour and bread crumbs in separate shallow bowls. Dip tomato slices in flour to coat both sides; shake off excess. Dip in egg mixture, then in bread crumbs, patting to help coating adhere., In an electric skillet or deep fryer, heat oil to 350°. Fry tomato slices, a few at a time, until browned, 1-2 minutes on each side. Drain on paper towels. Sprinkle with salt and pepper., To assemble napoleons, layer one tomato slice with 1 tablespoon pimiento cheese. Repeat layers. Top with 1 teaspoon pepper jelly. Repeat with remaining tomato slices. Delicious Corsican drink to honor Napoleon, who was born on Corsica. Mandarine Napoleon liqueur was created to honor Napoleon while he was alive (by a social-climbing chemist), considered a French liqueur, but it is actually produced in Belgium. It is an (38% alcohol) orange-flavored liquor with a cognac base, with a spicy orange bouquet and pale orange color. It is made with Mandarin peel from Sicily chopped fine and steeped in cognac, then filtered, then added to alcohol, sugar, 21 herbs and spices (supposedly include clove, coriander, cumin and green tea). The alcohol is distilled 3 times and aged 3 years before bottling. If you can't find Mandarine Napoleon, I would substitute Grand Marnier for the best taste, then Cointreau, or, if desperate, triple sec. But if you want to honor the great little man, buy the real stuff. Hmm, the Mandarine Napoleon has a unique taste, sweet without being cloying, but not too "sophisticated". I heartily recommend this cocktail, and spring for the real deal, you'll be glad you did.
