I love this salsa! It makes for a perfect summer appetizer. I particularly like that it has black beans for extra protein. When served over grilled chicken, it is even better.

MANGO AND BLACK BEAN STEW

Mango and Black Bean Stew image

This recipe is the only vegetarian dish I've been able to get my family to enjoy - and they really enjoyed it! Since sweet potatoes are so hard to chop up raw, I go ahead and boil them ahead of time until they're just tender enough that I don't need a chainsaw to get through them. Non-vegetarians can feel free to add 1/8 pound chopped sausage and/or ham with the onion in the first step.

AVOCADO, MANGO AND BLACK BEAN QUESADILLA

Avocado, Mango and Black Bean Quesadilla image

I'm always looking for new vegetarian dinners. This is a pretty simple recipe, but the key is to get the avocado and mango at just the right ripeness...Years ago I used to eat at a restaurant that had a killer black bean quesadilla that they served on a blue corn tortilla. I've looked everywhere for blue tortillas for this recipe because I think it would really make the ingredients stand out, but for now it works pretty well with a regular flour tortilla.

Categories     Lunch/Snacks

Time 15m

Yield 1-2 serving(s)

Number Of Ingredients 9

2 flour 8-inch tortillas
1 medium avocado
1 medium mango
1/2 cup canned black beans
2 ounces grated monterey jack cheese
1/4-1/2 teaspoon salt
1/4 teaspoon coriander powder
1/4-1/2 teaspoon cayenne pepper
lemon juice

Steps:

  • Heat a large skillet or griddle over medium heat, lightly coated in oil.
  • Dice mango and avocado- they should be small pieces, but still large enough that they keep their shape when mixed. Add a splash of lemon juice to the avocado to keep it from turning brown.
  • Gently mix avocado, mango, black beans and seasonings in a small bowl.
  • Put one tortilla on hot skillet or griddle and cover with the grated Monterey Jack cheese.
  • Once cheese is melted, add the filling mixture and top with the second tortilla.
  • Carefully flip the quesadilla and cook just long enough to lightly brown the second tortilla.
  • If I'm eating this as a meal, I cut into four pieces. If I'm sharing as a side dish or appetizer, I cut into six pieces. I usually serve with a simple, fresh salsa.

Brazilian Black Bean Stew image

Categories     Bean     Stew     Vegetarian     Raw     Simmer

Yield 6 to 8 servings

Number Of Ingredients 16

1 cup salt-free tomato juice
4 1/2 cups water
1 1/2 cups raw brown rice, rinsed
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced
4 cups cooked black beans (about 1 2/3 cups dried), or two 16-ounce cans, drained and rinsed
1 medium red bell pepper, cut into short, narrow strips
1 medium green or yellow bell pepper, cut into short, narrow strips
1 cup diced ripe tomatoes, or 1 cup salt-free canned diced tomatoes
1 small fresh hot green chili, or more to taste
1 1/2 teaspoons ground cumin
1/2 teaspoon dried thyme
1/2 cup chopped fresh parsley or cilantro
Salt and freshly ground pepper to taste

Steps:

  • Combine the tomato juice with 3 cups of the water in a large saucepan and bring to a simmer. Add the rice, then lower the heat and simmer gently, covered, until all the liquid is absorbed, about 30 minutes. Set aside.
  • Meanwhile, heat the oil in a large soup pot. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until the onion is golden.
  • Stir in the sweet potatoes and the remaining 1 1/2 cups of water. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the sweet potatoes are just tender but still firm, about 10 to 15 minutes.
  • Add the beans, bell peppers, tomatoes, chili, cumin, and thyme. Simmer gently for 10 to 15 minutes longer, uncovered. The stew should have the consistency of a thick chili-moist but not soupy. Add a bit more water if too thick.
  • Stir in half of the parsley and season with salt and pepper. Serve over the hot cooked rice in shallow bowls and garnish each serving with a little of the extra parsley.

Tips:

  • Use ripe mangoes. Unripe mangoes will be sour and not as flavorful. You can tell if a mango is ripe by its color. A ripe mango will be a deep yellow or orange color. It will also be slightly soft to the touch.
  • Choose black beans that are firm and not wrinkled. Wrinkled black beans are old and will not be as flavorful. You can also use canned black beans, but be sure to rinse them thoroughly before using.
  • Don't overcook the vegetables. Overcooked vegetables will be mushy and not as flavorful. Cook the vegetables just until they are tender-crisp.
  • Season the stew to taste. You can add more chili powder, cumin, or salt and pepper to taste. You can also add a squeeze of lime juice or a dollop of sour cream.
  • Serve the stew with your favorite sides. Rice, tortillas, or chips are all great options.

Conclusion:

Mango and black bean stew is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover mangoes.
