3 pounds sweet potatoes
3 tablespoons unsalted butter
3 tablespoons pure maple syrup
1/2 teaspoon grated orange zest
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Put on a baking sheet and roast until very tender and a knife easily pierces through the center, 45 to 60 minutes.
  • Let the potatoes cool slightly and then halve lengthwise. Holding the sweet potatoes with a potholder or towel, scoop out the insides and discard the skins. Pass the potatoes through a food mill or ricer into a large bowl.

Juice of 1 medium orange

  • Heat oven to 375°F. Line cookie sheet with foil. Place sweet potatoes on cookie sheet; prick several times with fork. Bake 1 hour or until very tender. Let stand 15 minutes.

4 large sweet potatoes
½ cup softened butter
1 cup heavy cream
2 tablespoons vanilla extract
½ cup packed light brown sugar
1 teaspoon salt
½ cup maple syrup
1 cup chopped pecans
2 eggs, beaten
2 tablespoons maple syrup
¼ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Place sweet potatoes onto the prepared baking sheet, and bake in preheated oven until soft, 45 minutes to 1 hour. Remove from the oven and allow to cool slightly before peeling and placing into a large bowl.

"Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

4 lbs sweet potatoes, peeled, cut into 1-1/2-inch chunks, 5-6 sweet potatoes
6 slices bacon
1/2 cup half-and-half
1/3 cup maple syrup
1/3 cup butter, at room temperature
1 1/4 teaspoons salt
3/4 teaspoon ground cumin
1/4 teaspoon pepper
1/3 cup chopped fresh chives

Steps:

  • In pot combine sweet potatoes with enough salted water to cover. Over high heat bring to boil. Cook until tender, 10 minutes. Drain; return to pot.
  • Meanwhile, in nonstick skillet over medium-hig heat cook bacon until crisp, 6-8 minutes; drain on paper towels. Crumble.
