1 cup rolled gluten-free oats
1 1/2 cups almond milk
2 tablespoons pure maple syrup
2 tablespoons chia seeds
2 teaspoons maca powder (optional)
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 cup pumpkin purée
2-3 tablespoons pure maple syrup
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Combine all ingredients for the Maple Oat Layer in a bowl and mix well. Cover and place in the refrigerator overnight (about 7-8 hours).
  • In a separate bowl, combine all ingredients for the Pumpkin Spiced Layer and mix well. Can be refrigerated overnight or made in the morning.
  • Layer your oats, then pumpkin, then oats and pumpkin again into 2 mason jars.
  • I added chopped honey crisp apples and pecans on top.
  • Enjoy!

1/3 cup old-fashioned rolled oats
1/2 tsp pumpkin pie spice
2 tsp, plus 1/2 tsp maple syrup
1/4 cup unsweetened vanilla almond milk
1/3 cup nonfat plain Greek yogurt
1/4 tsp vanilla extract
1/4 cup canned pumpkin
1/2 banana, sliced

Steps:

  • In a mason jar or container with lid, add first 3 dry ingredients and stir. Add almond milk and stir. Add yogurt, vanilla and pumpkin, and stir to combine. Cover and place in refrigerator overnight. In the morning, add sliced banana and drizzle maple syrup on top. Sprinkle with additional pumpkin pie spice if desired.
