1/4 cup butter, softened
1 cup packed brown sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon vanilla or 1 teaspoon maple extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup white chocolate chips
3/4 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, beat the butter, brown sugar and maple syrup until well combined.
  • Add the egg and vanilla and beat until smooth.
  • Add the flour, baking soda and salt (stir them together first only if you want to) to the butter-sugar mixture and stir by hand until almost combined; add white chocolate and walnuts and stir just until blended.
  • Drop spoonfuls of dough (or roll rough walnut-sized balls) about 2" apart on a cookie sheet that has been sprayed with nonstick spray. Flatten each a little with your hand, just to give them a head start. Bake for 10-12 minutes, or until pale golden and set around the edges but still soft in the middle. Transfer to a wire rack to cool.

Tips:

  • Use high-quality white chocolate chips for the best flavor.
  • Toast the walnuts before adding them to the batter for a richer flavor.
  • Chill the dough for at least 30 minutes before baking to prevent the cookies from spreading too much.
  • Bake the cookies until they are just set in the center. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them in an airtight container.
