Warm the water a bit to help dissolve the sugar. It shouldn't be hot, about 30 seconds in the microwave or briefly on the stove is sufficient. We will often make them with a touch more tequila, but they won't freeze as solid. If you are using a mold which easily release the pops feel free to use about 1/3 cup of tequila instead of the 1/4 cup.Makes ten 2.5 ounce Pops

Time 5m

Yield 12 popsicles, 12 serving(s)

Number Of Ingredients 8

1 1/4 cups fresh lime juice, plus 4 limes for stabilizing the popsicle sticks (about 8 limes)
1 (14 ounce) can sweetened condensed milk
1 cup water
1/4 cup tequila
2 tablespoons orange juice (optional)
kosher salt or margarita salt
12 small paper cups (3oz)
12 popsicle sticks

Steps:

  • In a pitcher or large cocktail shaker, combine the lime juice, sweetened condensed milk, water, tequila, and orange juice. It is important to combine the ingredients in a container that has a spout because it will make it much easier to pour the mix into cups.
  • Line out the Dixie cups on a baking sheet, so it will be easy to transport them to the freezer. Fill each Dixie cup 90% of the way with the tequila mixture.
  • Slice the limes into 1/4 inch thick rounds. Push a craft spoon through the center of each lime round, so that half of the stick pokes out from each side. Top the mixture with the lime sticks. Make sure the lime is resting directly on top of the tequila mixture.
  • Freeze for at least 6 hours, or overnight. When ready to remove the popsicles from the Dixie cups, simply snip a small cut in the rim of each cup and peel them away from the popsicle. Place the popsicles onto a dish with crushed ice to keep them from melting too quickly, Sprinkle the tops generously with kosher salt, and serve.

  • If you don't have popsicle molds, you can use small paper cups or dixie cups. Just be sure to insert a popsicle stick in the center of each cup before freezing.
  • To make the popsicles more kid-friendly, omit the lime juice and triple sec, and add 1/2 cup of lemonade concentrate instead.
  • For a fun and festive presentation, dip the popsicles in melted chocolate or white chocolate, then sprinkle with chopped nuts, crushed candy, or edible glitter.
  • These popsicles can be stored in the freezer for up to 2 weeks. Just be sure to wrap them tightly in plastic wrap or store them in an airtight container to prevent freezer burn.
