MARIA'S CLASSIC PAELLA

Maria's Classic Paella image

I have loved paella since the first time I tried it while traveling through Spain at 17. Though I could never make it as great as my friend's mom in Madrid, this recipe comes so close! It's a favorite at our house for Sunday dinner and tastes all the better when made in a traditional paella pan (brought back in a suitcase, no less!). I hope you enjoy it as much as we do!

Time 1h25m

Yield 8

Number Of Ingredients 19

4 cups chicken stock
20 saffron threads, crushed
¾ cup olive oil
4 chicken thighs
1 cup chopped onion
4 cloves garlic, minced
4 links chorizo de bilbao (spicy Spanish semi-cured sausage)
2 cups Spanish paella rice
2 teaspoons Spanish sweet paprika
½ cup grated peeled roma (plum) tomatoes
8 clams in shell, scrubbed, or more to taste
8 mussels, cleaned and debearded, or more to taste
8 prawns, peeled and deveined (leave tails)
3 red bell peppers, cut into strips
10 ounces peas
salt and ground black pepper to taste
½ cup chopped fresh Italian parsley
8 wedges lemon
1 baguette, sliced

Steps:

  • Bring stock to a simmer in a stockpot over medium-low heat. Stir crushed saffron into the simmering stock.
  • Heat olive oil in a paella pan over medium heat. Fry chicken thighs in hot oil until lightly browned, 3 to 5 minutes per side. Add onion and garlic; cook and stir until the onion is translucent, 5 to 7 minutes more. Arrange the chorizo into the pan around the chicken thighs and cook until warmed, 3 to 5 minutes per side.
  • Pour rice into the paella pan and stir to coat with oil; season with sweet paprika. Stir grated tomato into the rice and cook until the tomato is warmed, 2 to 3 minutes.
  • Pour chicken stock into the paella pan and bring to a boil while scraping any browned bits of food off the bottom of the pan with a flat-edged wooden spoon. Smooth surface of rice with the wooden spoon in an even layer so it cooks evenly.
  • Reduce heat to medium-low and continue to cook, without stirring, until the rice has softened but has yet to completely absorb the stock, 15 to 30 minutes.
  • Place clams and mussels, hinged-side down, into the rice; continue simmering until the mussels and clams open, 5 to 7 minutes.
  • Nestle prawns into the rice; add bell pepper and peas. Continue cooking until the bottom of the rice is browned and fragrant, about 10 minutes. Remove from heat and cool 5 to 10 minutes. Season with salt and pepper, sprinkle parsley over the paella, and garnish with lemon wedges. Serve with baguette slices.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 14

5 tablespoons olive oil, divided
1/2 cup onion, finely chopped
1/4 cup garlic, chopped
1 cup tomatoes, grated (or tomato pulp)
1/4 lb cod fish fillet, cubed (or other firm white-fleshed fish)
4 squid, bodies cleaned and cut into rings
1/4 cup dry white wine
2 3/4 cups fish, more as needed (or vegetable broth)
1 pinch saffron
1 bay leaf
1 tablespoon sea salt
1 1/2 cups rice (Bomba, Valenciano or Vialone Nano)
8 mussels, cleaned
8 shrimp, peeled

Steps:

  • Make the sofrito. Heat a 12-inch paella pan over medium-high heat. Add 3 Tbsps. oil, then the onions and cook, stirring frequently, until the onions are softened, 3 to 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Stir in the grated tomatoes and cook, stirring frequently, until the tomatoes have lost most of their moisture and the sofrito is reduced to about one-fourth cup, 8 to 10 minutes. Remove from heat and place the sofrito in a small bowl. Wipe the pan.
  • Return the pan to medium-high heat. When the pan is hot, add the remaining oil, then the cod and squid. Sear the fish, stirring frequently, about 1 minute. Reduce the heat to medium and add the sofrito back to the pan. Cook, stirring the sofrito with the fish to blend the flavors, for 3 minutes. Add the wine, stirring to remove any bits of flavoring from the bottom of the pan. Cook until the wine is reduced by half, about 1 minute.
  • Stir in the fish broth, then add the saffron and bay leaf. Season with the salt; the broth will be a bit salty at first, but will even out as the rice cooks.
  • Spread the rice evenly in the pan. The rice should be completely submerged; if not, add more broth to the pan. Do not stir the rice. Bring the mixture to a boil over high heat, then reduce the heat to a gentle simmer. Arrange the mussels and shrimp over the rice and continue to cook, being careful not to break the film that forms on the surface of the rice or the rice will not cook evenly. Rotate the pan as needed so the paella cooks evenly. Cook until the liquid is mostly absorbed by the rice, the shrimp are firm and opaque and the mussels have opened, about 10 minutes. Remove from heat.
  • Cover the pan loosely with paper towels and rest for at least 5 minutes before serving at warm room temperature. The paella can remain at room temperature for up to 2 hours, covered, before serving.

### 3 Key Elements for an Authentic Paella --- 1. **Use the Right Pan:** - Paella pans are made of polished carbon steel, which distributes heat evenly. Its wide, flat shape allows the rice to spread thinly, facilitating even cooking. 2. **Use the Right Type of Bomba or Calasparra Short Grain:** - Paella requires bomba or calasparra short-grain rice. - Bomba rice is plumpy and retains a slight chewiness even after cooking. - Calasparra rice is considered the traditional choice. 3. **Use a Well-Stocked Pantry:** - Paella is all about bringing together myriad flavors. It starts with a sofritto base of onions, tomatoes, peppers, and plenty of aromatic spices like paprika, saffron, and pimenton. - Meat options are wide-ranging but should include chicken, seafood, and chorizo. - Vegetables may include green or red peppers, green or lima flat garden peas, artichoke wedges, or green or white asparagus. ### Seasoning the Pan - A Key Step for Authentic Paella - Seasoning the pan is an essential step that helps prevent the paella from sticking. This is done by rubbing the pan with salt while it is still warm. - The salt helps to create a layer of seasoning on the pan, which prevents food from sticking. - Once the pan is seasoned, it should be rinsed with hot water and then wiped dry. ### Top tips and Tricks for the Best Paella - Use a combination of Bomba and Calasparra rice for the best results. The unique characteristics of both types of rice will give your paella a perfect texture and taste. - Don't rinse the rice before cooking. Rinsing the rice will remove the starch, which is essential for achieving the creamy, slightly sticky texture of paella. - Use chicken stock or fish stock instead of water for more flavorful rice. - Don't overcrowd the pan. The rice needs space to absorb the liquid and cook evenly. - Cook the paella over medium heat so that the rice has time to absorb the flavors without drying out. - Don't let the paella burn. Keep an eye on the pan and adjust the heat as needed. - Let the paella rest for a few minutes before serving. This will help the rice to absorb the remaining liquid and firm up. ### The Bottom Line - Paella is a delicious Spanish dish that is perfect for any occasion. - Follow the tips and tricks in this article to make the best paella possible. - Paella is a versatile dish that can be tailored to your own taste. - So get creative and experiment with different ingredients and flavors. ### Note: This is a summary of the blog post "The Secret to Paella: 3 Elements & Top Tricks" by Menu of Recipes.
