MARMALADE MEATBALLS

My mom made these for my family's Christmas party and my family thought they were so good. When my mom made these she did not add the red pepper flakes due to these being served to children. When I made them I did the same as my mom except I used a 12oz jar of orange marmalade to use up a couple of leftover tablespoons. I also used Aldi's brand frozen meatballs. The recipe is from Sandra Lee at Food Network.

These are great! I've served them as an appetizer and also with rice and veggies for dinner. I often half the recipe for just my husband and I. I've made a few minor changes from the original recipe, this is adapted from Sandra Lee's show Semi-Homade. These can also be made in a crockpot and heated over high heat for 2 to 3 hours.

THE BEST MEATBALLS

The Best Meatballs image

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Time 50m

Yield 8

Number Of Ingredients 11

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

Tips:

  • Choose the right mince: For the best flavor and texture, use a combination of ground beef and pork. You can also use ground lamb or veal, if you prefer.
  • Season the mince well: Don't be afraid to be generous with the seasonings. A good combination of salt, pepper, garlic, and onion powder will give the meatballs plenty of flavor.
  • Use bread crumbs to bind the meatballs: Bread crumbs help to bind the meatballs together and keep them moist. You can use fresh or dried bread crumbs, or even crackers.
  • Brown the meatballs before simmering them: Browning the meatballs in a little oil before adding them to the sauce will help to develop their flavor and give them a nice color.
  • Simmer the meatballs in a flavorful sauce: The sauce you use to simmer the meatballs in is important. A good option is a simple tomato sauce made with crushed tomatoes, garlic, and basil. You can also use a more complex sauce, such as a red wine sauce or a creamy mushroom sauce.
  • Serve the meatballs hot: Meatballs are best served hot, right out of the pan. You can serve them as an appetizer, main course, or side dish.
