Time 1h

Yield 4

Number Of Ingredients 11

4 (6 ounce) filet mignon steaks
seasoned salt to taste
cracked black pepper to taste
¼ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons dried rosemary
1 tablespoon butter
2 cups onion slices
1 teaspoon white sugar
4 ounces blue cheese, crumbled

Steps:

  • Season steaks with seasoned salt and black pepper, and arrange in a single layer in a large baking dish. In a bowl, whisk together olive oil, balsamic vinegar, mustard, and rosemary. Pour mixture over filets, and turn to coat. Marinate for up to 30 minutes.
  • While you are marinating the meat, melt the butter in a skillet over medium heat. Cook onion slices in butter until soft, then stir in sugar. Continue cooking until onions are caramelized. Set aside.
  • Preheat grill for high heat on one side, and medium heat on the other side.
  • Lightly oil the grill grate. Place steaks on the hot side of the grill, and cook for 10 minutes, turning once. When the steaks are almost done, move to the cooler side of the grill. Top each filet with a quarter of the caramelized onions and blue cheese. Close the lid, and continue cooking until the cheese is melted.

MARINATED FILET MIGNON

Marinated Filet Mignon image

This recipe is similar to the recipe used by Massa's restaurant in Houston. They serve it with their pan roasted fresh vegetable medley (also posted this recipe separately). It's so simple and quick, but impressive, that it's a great recipe for entertaining. Note: I had to give a cooking time, but that varies depending on whether you are grilling steaks (also how thick your steaks are) or if you are roasting the tenderloin.

MARTINI-MARINATED STEAK (FILET MIGNON)

Martini-Marinated Steak (Filet Mignon) image

Filet Mignon and Martinis; does it get any more decadent than that? The martini tenderizes the steak and gives it a nice, subtle flavor - not overpowering or alcohol-y at all. This steak will literally melt in your mouth. (The cut of the meat really isn't as important as the quality. If you prefer a rib-eye, get that, but get the best quality meat you can afford as it really does make a difference. I like a nice, dry-aged Hereford.) Cooking time does not include marinating time.

Time 20m

Yield 2 serving(s)

Number Of Ingredients 9

2 (4 -6 ounce) beef tenderloin fillets (can substitute your favorite cut)
2 teaspoons kosher salt or 2 teaspoons sea salt
1 tablespoon fresh coarse ground black pepper
2 tablespoons finely chopped fresh parsley
2 tablespoons finely snipped chives
2 garlic cloves, minced
1/3 cup vodka (doesn't have to be top-shelf, but I wouldn't use the cheap-o stuff either)
1 tablespoon dry vermouth
2 juniper berries (I substitute 1 Tbsp gin instead)

Steps:

  • Rub both sides of the steaks with salt and pepper.
  • Combine the rest of the ingredients, add the steaks and marinate in the refrigerator for 20 to 30 minutes. (Don't let it marinate for too long or the alcohol will break down the meat too much.)
  • Remove the steaks from the marinade and let them sit for 10 minutes or so to come to room temperature. Discard the marinade.
  • Heat the grill to medium-high.
  • Grill the steaks, covered, for 3 or 4 minutes each side for medium-rare. Adjust this cooking time depending on the cut of meat you are using.
  • Remove the steaks, cover them with foil and let them rest for about 5 minutes before serving.

Yield Serves 4

Number Of Ingredients 15

For marinade
1 scallion
1/4 cup hoisin sauce
1 1/2 tablespoons soy sauce (preferably Kikkoman)
2 teaspoons grated peeled fresh gingerroot
1 teaspoon Worcestershire sauce
four 1 1/4-inch-thick filets mignons (tenderloin steaks)
For salsa
1 large firm-ripe nectarine
1/2 green bell pepper
2 medium tomatoes
4 scallions
2 garlic cloves
1 small fresh chile (preferably habanero)
2 tablespoons fresh lime juice, or to taste

Steps:

  • Make marinade:
  • Finely chop scallion and in a bowl whisk together with remaining marinade ingredients.
  • In a large heavy-duty sealable plastic bag combine marinade and steaks, turning steaks to coat with marinade, and seal bag, pressing out excess air. Marinate steaks at room temperature 1 hour.
  • Make salsa while steaks are marinating:
  • Finely chop nectarine and bell pepper. Seed and finely chop tomatoes. Thinly slice white and pale-green parts of scallions and mince garlic. Wearing protective gloves, discard seeds and ribs from chile and finely chop chile. In a bowl stir together all salsa ingredients and season with salt and pepper.
  • Prepare grill.
  • Remove steaks from marinade, discarding it, and grill steaks on an oiled rack set 5 to 6 inches over glowing coals, 3 to 4 minutes on each side for medium-rare. (Alternatively, grill steaks in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Transfer steaks with tongs to a platter and let stand 5 minutes.
  • Serve steaks with salsa.

Tips:

  • To ensure the best flavor, choose high-quality filet mignon steaks that are at least 1 inch thick.
  • When marinating the steaks, use a non-reactive container, such as a glass or ceramic dish. This will prevent the marinade from reacting with the metal and altering the flavor of the steaks.
  • Allow the steaks to marinate for at least 30 minutes, or up to overnight. The longer the steaks marinate, the more flavorful they will be.
  • When cooking the steaks, use a heavy-bottomed skillet or grill pan over high heat. This will help to sear the steaks and create a flavorful crust.
  • Cook the steaks for 3-4 minutes per side, or until they reach your desired level of doneness. Be sure not to overcook the steaks, as this will make them tough and chewy.
  • Let the steaks rest for a few minutes before serving. This will allow the juices to redistribute throughout the steaks, resulting in a more tender and flavorful steak.

Conclusion:

Martini-marinated steak filet mignon is a delicious and easy-to-make dish that is perfect for a special occasion dinner. The marinade, made with martini, olive brine, garlic, and herbs, infuses the steaks with a unique and flavorful taste. The steaks are then cooked to perfection and served with a variety of sides, such as grilled vegetables, mashed potatoes, or a simple salad. Whether you are a seasoned chef or a beginner in the kitchen, this recipe is sure to impress your guests and become a favorite in your recipe collection.
