One 14-ounce package dried thin rice noodles
1 tablespoon fish sauce, or more as needed
1 tablespoon white sugar
Vegetable oil, for frying
1 block firm tofu, pressed and cut into 1-inch cubes
2 shallots, minced
1 egg
1 bunch green onions, sliced
1 bunch bean sprouts
1/2 cup crushed peanuts
1 bunch radishes, cut into slices
2 limes cut, into wedges
Chili powder

Steps:

  • Soak the noodles in a shallow dish covered in water until pliable, about 10 minutes. Mix the fish sauce and sugar in a small bowl and reserve.
  • Heat about 1 inch of vegetable oil in a high-sided skillet or wok and add the tofu. Fry the tofu until golden brown on all sides. Remove to paper-towel-lined plate to drain.
  • In the same pan, add the shallots and saute until translucent, about a minute. Crack in the egg and break up while stirring together. Mix in the reserved fried tofu, fish sauce and sugar mixture and noodles. If the noodles are not coated enough in the sauce, stir in a couple more tablespoons of fish sauce. Add in the green onions and saute for another 30 seconds. Add the bean sprouts and remove from the heat. Top with crushed peanuts, radishes, limes and chili powder.

½ lb wide rice noodle
¼ cup palm sugar
¼ cup fish sauce
¼ cup tamarind paste
1 tablespoon oil
6 oz boneless, skinless chicken breast
2 cloves garlic, minced
2 shallots, minced
1 teaspoon pickled turnip, optional
1 egg
4 oz tofu, cubed, optional
½ bunch green onion, or chinese chives, sliced, plus more for serving
½ cup bean sprout, plus more for serving
lime, for serving
peanut, for serving
red thai chile, diced, for serving, optional

Steps:

  • Soak rice noodles in room temperature water 30 minutes prior to cooking.
  • In a small saucepan over medium-high heat, whisk together palm sugar, tamarind paste, and fish sauce. Bring to a boil, reduce heat, and reduce for 5 minutes until the sauce thickens and coats the back of a wooden spoon. Remove sauce from heat and set aside.
  • Heat a cast-iron pan or wok over high heat.
  • Add oil and chicken and cook for about two minutes until nearly cooked through and nicely seared on all sides.

2 cups chicken stock
1 cup water
2 stalks lemongrass, chopped
1 cup peanuts
½ cup coconut powder
1 pound boneless chicken breast, sliced
¼ cup oyster sauce
2 tablespoons fish sauce
2 tablespoons dark soy sauce
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons peanut oil, divided
½ cup chopped ginger
1 small Spanish onion, chopped
2 jalapeno peppers, seeded and chopped
4 cloves garlic, chopped
1 habanero pepper, seeded and chopped, or more to taste
1 large carrot, cut into matchsticks
1 large yellow bell pepper, sliced
1 small green bell pepper, sliced
4 small radishes, sliced
1 large king oyster mushroom, sliced
2 tablespoons red curry paste
1 teaspoon curry powder, or more to taste
¼ cup white wine
¼ wedge lime, juiced
5 sprigs cilantro leaves, chopped

Steps:

  • Place noodles in a large pot and cover with lukewarm water. Let soak until softened, about 30 minutes. Bring to a boil; cook, stirring occasionally, until noodles are tender yet still firm to the bite, about 3 minutes. Drain and return to the pot.
  • Combine chicken stock, 1 cup water, and lemongrass in a small saucepan. Bring to a boil; simmer until broth is fragrant, about 5 minutes. Strain out lemongrass and discard.

Add carrot, yellow bell pepper, green bell pepper, and radishes; cook and stir for 1 minute. Stir in mushroom, red curry paste, and curry powder until well-combined, 1 to 2 minutes.
  • Pour broth and white wine into the wok. Cook until reduced, about 5 minutes. Stir in 1/2 of the toasted peanuts and all the coconut; simmer for 2 minutes. Add chicken; continue simmering until chicken is no longer pink in the center until sauce has reduced to about 1 1/2 cup, about 5 minutes.
