Gruyere Mashed Potatoes image

These Gruyere Mashed Potatoes are a creamy mashed potatoes recipe loaded with flavor. I'll give you step-by-step instructions on how to get the best-mashed potatoes ever. The entire family will love this easy potato recipe.

Provided by Jill Baird

Categories     Side Dish

Time 45m

Number Of Ingredients 8

5 lbs Potatoes (red, Yukon gold, or russet Potatoes)
2/3 cup Sour Cream (full fat, or skim)
1/4 cup Parmesan Cheese (shredded)
1/2 cup Gruyere Cheese (shredded)
1- 1 1/2 Tablespoons Salt (salted)
1/2 cup Milk (or cream)
1 tsp Garlic Powder
3 Tablespoons Butter (salted)

Steps:

  • Wash the potatoes and cut into 1" cubes. (You can leave the peel on if desired or peel half of the potatoes. The potato peel gives it a rustic texture, so yummy)
  • Place the potatoes in a pot and cover with hot water, add 2 teaspoons of salt, and bring to a boil.
  • Cooking on medium heat, boil potatoes for 20-30 minutes or until the potato is soft but not mushy. You'll know it has cooked long enough when you stick a fork in the potato and the potato doesn't stay on the fork when you lift it.
  • Drain the water off the potatoes. Add the potatoes to the pot again and add the remaining ingredients.
  • Mash potatoes with a hand masher or an electric mixer ( if you plan to use an electric mixer, don't overmix the potatoes or they will have a gluey texture-use a low speed and only until the potatoes are mashed enough) You can add a pat of butter and chopped parsley for garnish. Enjoy!

WINTER SQUASH AND POTATO GRATIN

Winter Squash and Potato Gratin image

This savory casserole is an almost classic gratin dauphinois (potatoes au gratin), with squash standing in for half of the potatoes and low-fat milk substituting for cream. It is a very comforting dish that can be baked ahead and reheated.

Categories     casseroles

Time 2h

Yield Serves 6

Number Of Ingredients 9

1 large garlic clove, cut in half
1 1/4 pounds russet potatoes or Yukon golds (or add purple potatoes to the mix), scrubbed, peeled if desired and sliced about 1/4 inch thick
1 1/4 pounds winter squash, such as butternut, peeled and sliced about 1/4 inch thick
1 teaspoon fresh thyme leaves
1 teaspoon chopped fresh rosemary
1 cup, tightly packed, grated Gruyère cheese (4 ounces)
Salt to taste
Freshly ground pepper
2-1/2 cups low-fat milk

Steps:

  • Preheat the oven to 375 degrees. Rub the inside of a 2-quart gratin dish or baking dish with the cut side of the garlic, and lightly oil with olive oil or butter. Slice any garlic that remains and toss with the potatoes, squash, thyme, rosemary, half the cheese and a generous amount of salt and pepper. Arrange in an even layer in the gratin dish.
  • Pour the milk over the potatoes and squash, and press the vegetables down into the milk. Place in the oven, and bake one hour. Every 20 minutes, remove the gratin dish and press the potatoes and squash down into the liquid with the back of a large spoon. After one hour, sprinkle on the remaining cheese and bake for another 30 minutes, until the top is golden and the sides crusty. Remove from the oven, and allow to sit for 10 to 15 minutes before serving. Serve hot or warm.

MASHED POTATOES

Mashed Potatoes image

Mashed potatoes are very forgiving, and with a good masher, hot potatoes and enough butter and salt, cooks can accommodate religionists of the fluffy style and partisans of the creamy and dense. Be openhanded with salt and butter but stingy with milk, which will flatten out the bright, earthy potato taste. (And for everything you need to know to make perfect potatoes, visit our potato guide.)

Provided by Julia Moskin

Categories     vegetables, side dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 4

Salt
2 1/2 pounds potatoes (about 6 large potatoes), preferably a combination of russet (baking) potatoes and large Yukon Golds, or all Yukon Golds
4 tablespoons butter, more for dotting
1/3 cup whole milk

Steps:

  • In a large pot, bring a gallon of water and 2 tablespoons salt to a boil over high heat. Peel and quarter potatoes and keep in cold water until ready to cook. (This can be done up to 4 hours in advance.) Add potatoes to boiling water and boil about 15 to 20 minutes, until soft; a knife should go in with almost no resistance. (It is better to overcook than to undercook.)
  • In a saucepan or a microwave oven, heat butter and milk together until butter melts and mixture steams. Drain potatoes well and return to pot. Shake them around in the hot pan or over very low heat for a minute (you want dry potatoes). Using an extruding masher or a ricer, mash hot potatoes until smooth, about 2 minutes. Lightly mix in about half of hot butter mixture, just until blended. Taste for salt and add more butter mixture until seasoned to your liking.
  • Stop here for fluffy potatoes. For creamy potatoes, keep stirring potato mixture, using a sturdy spoon to press it against sides and bottom of pot. Mix until dense and thick. For whipped potatoes, use a stand mixer to mash hot potatoes just until smooth, about 30 seconds. Add all the butter mixture and salt to taste, pulsing machine in short bursts at medium speed. When light and creamy, stop mixing immediately. (Potatoes can quickly become sticky.)
  • To keep hot until ready to serve, transfer to serving bowl, dot top with butter, cover tightly and keep in a warm place, like the back of the stove. Potatoes will stay hot for at least 30 minutes. To keep longer, place covered bowl in a pan holding about an inch of gently simmering water. Before serving, mix well.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are best for mashed potatoes because they are starchy and fluffy. Avoid waxy potatoes like red potatoes, as they will not mash well.
  • Boil the potatoes in salted water: Salting the water helps to flavor the potatoes and prevents them from becoming bland. Add the potatoes to the boiling water and cook until they are tender, about 15-20 minutes.
  • Drain the potatoes well: Once the potatoes are cooked, drain them well in a colander. This will help to remove excess water and prevent the mashed potatoes from becoming gluey.
  • Mash the potatoes until smooth: Use a potato masher or ricer to mash the potatoes until they are smooth and lump-free. If you prefer chunky mashed potatoes, you can leave some small lumps in the potatoes.
  • Add flavorings to taste: Once the potatoes are mashed, you can add flavorings to taste. Some common flavorings include butter, milk, cream, sour cream, garlic, herbs, and spices.
  • Keep the mashed potatoes warm: If you are not serving the mashed potatoes right away, you can keep them warm in a slow cooker or in a covered dish in the oven. This will help to prevent them from drying out.

Mashed potatoes and squash with Gruyère is a delicious and easy-to-make side dish that is perfect for any occasion. The combination of sweet squash, creamy potatoes, and nutty Gruyère cheese is sure to please everyone at your table.
