- Melt two teaspoons butter in large nonstick skillet over medium heat and add onions.
- Saute about 3 minutes, until softened, then add jalapeno and ginger and saute for another minute.
- Add potatoes, pour in chicken broth, then stir the curry paste through.
- Heat to boiling, cover and reduce heat and simmer until potatoes are tender, about 12 to 15 minutes.
- Drain potatoes well and put in a bowl large enough to mash them inches
- Mash potatoes with remaining 2 teaspoons butter, salt and a few turns of the pepper mill until smooth.

- 1. Cook sweet potatoes in oven or in microwave, and let cool. Peel. Mash well, and add butter, brown sugar, spices. Make sure it is well blended. Add chopped pecans. Stir in the evaporated milk well. If you would like this variation, Jazz up the casserole by adding 1 1/2 ounces of your favorite Bourbon for a Southern flavor, or maybe some Brandy or even some Butterscotch Schnapps. Just blend it in well...
- 2. Spray a Pyrex or Corningware dish with nonstick spray. Pour sweet potato mixture into dish and place in preheated oven (350 degrees). Bake uncovered 45 minutes.
- 3. Remove from oven and pour on top the miniature marshmallows if desired. Bake an additional 15 minutes. Total cooking time should be about an hour. (Don't remove from the oven if not using marshmallows.) Let set about 20 minutes before serving.

- Wash, peel and dice sweet potatoes. Put diced sweet potatoes in medium saucepan in enough water to cover. Bring to a boil over high heat, reduce heat to simmer, stir occasionally & simmer until tender. Combine skim milk, salted butter and scraped vanilla bean in small saucepan and heat. Drain potatoes (reserving 2 tablespoons boiling liquid) in colander. Run potatoes through a food mill and put into large bowl. Add heated milk, butter and vanilla mixture, reserved boiling liquid, salt and pepper to taste. Use a 4-ounce ice cream scoop to neatly plate Vanilla Sweet Potato Mashed.

- Preheat the broiler. Then cook sweet potatoes by boiling until soft. When the potatoes are cooked and soft, combine them with milk, light butter, salt, cinnamon and nutmeg and mash or puree until smooth. Spoon into a 9 x 9 or 11 x 7-inch baking dish.
