1 cup whole milk
2 cups heavy whipping cream
¾ cup white sugar

Steps:

  • Whisk matcha powder in a bowl to remove any lumps; add a splash of milk and whisk until matcha powder is completely dissolved. Gradually whisk remaining milk into matcha mixture.
  • Combine cream and matcha mixture in a pot over medium-low heat; cook, stirring occasionally, until heated through, about 5 minutes.
  • Whisk sugar and eggs together in a bowl. Pour 1/2 cup hot matcha mixture into egg mixture; mix thoroughly. Repeat with remaining matcha mixture. Pour mixture back into the pot.

I enjoy drinking green tea and occasionally I enjoy a Starbucks Green Tea Frappuccino, or a Jamba Juice Matcha Smoothie Blast. This recipe is one I developed to be able to enjoy these smoothies at home. I think it tastes great and is really good for your health too. I hope you enjoy it as much as I do. Please note that this recipe does require premium matcha green tea powder. This is not just regular green tea leaves pulverized. This premium powder can be purchased at Japanese grocers, or online. I happen to purchase mine on that popular online auction site I'm sure you're familiar with. I use the "Usucha" (or thin) matcha green tea powder that comes straight from Kyoto, Japan. 2 ounces hot water (but not boiling)
3 teaspoons sugar (or artificial sweetener)
4 ounces milk

2 teaspoons superfine sugar

1 teaspoon instant yeast
¾ teaspoon salt
½ cup milk

1 tablespoon unsalted butter
2 teaspoons unsalted butter

Steps:

  • Place flour, 1 tablespoon plus 2 teaspoons sugar, green tea powder, yeast, and salt in a mixing bowl and mix by hand. Make a well in the center and pour in 1/2 cup plus 2 tablespoons milk and beaten egg. Mix to form a soft dough.
  • Turn dough out onto a lightly floured work surface. Knead until dough becomes smooth and is no longer sticky, about 5 minutes. Knead and mix 1 tablespoon plus 2 teaspoons butter into the dough.
  • Continue to knead until dough is smooth and elastic and no longer sticks to the work surface, about 15 minutes. Smooth dough into a ball and place in a mixing bowl. Cover with plastic wrap and let dough rise until doubled in size, about 1 hour.

2 tablespoons matcha green tea powder (best quality, see note)
2 teaspoons baking powder
1 cup unsalted butter, softened
2 cups powdered sugar
5 large eggs, separated

  • Prepare 2 loaf pans (9x5x3) by buttering and lining with parchment paper. Butter the parchment paper as well.
  • Preheat oven to 325 degrees.
  • In a medium bowl, stir together the flour, matcha, and baking powder.

The kind of matcha I buy comes in 5g packets, so I would use 5 packets to get 25g of powder. This is standard batch that makes enough to frost about 24-30 normal sized cupcakes; 10-15 Texas Muffin sized ones.

3 -4 cups confectioners' sugar
25 g matcha green tea powder
milk, as needed (or soymilk, almond milk, etc 2-4 tbsp)

  • Leave the butter out to soften for at least 4-6 hours. It must be very soft and squishy in order for this to work.
  • Put the butter in the bottom of a bowl, with about 2 cups of confetctioners sugar. Mix with an electric beater.

½ cup heavy cream

Steps:

  • Start with the filling. Pour the milk into a small saucepan, and sprinkle over the cornstarch, whisk until combined.
  • Next, add the honey and sugar stirring continuously over a low heat. When the milk mixture almost starts to boil it will thicken and get a bit lumpy, don't panic! Just keep stirring until it smooths out. Continue to stir the now thick milk mixture over the heat for an additional 1-2 minutes, to cook out the cornstarch flavor.
  • Take off the heat and pour into a bowl or shallow dish. Cover the mixture with cling wrap, pushing it all the way to the top of the custard to prevent a film from forming and chill this in the refrigerator until cold.
  • Next, make the cake by combining the sugar, honey, matcha powder, and eggs in a large bowl. Mix until it almost triples in size, is lighter in color, and becomes thick and fluffy. This will take about 7-10 minutes. If you dribble some of the batter on itself it should hold a "ribbon" shape for 4-5 seconds.
  • Once the batter has reached the correct consistency sift over the cake flour, and gently fold the flour in until all combined.
  • Heat your oven to 350˚F (175˚C) and butter your baking sheet. Place a piece of parchment paper (a few inches larger than your baking sheet) onto your baking sheet. Using a rubber scraper (or your hand) push out any bubbles.
  • Pour the batter into the prepared baking sheet and bake for 8-10 minutes.
  • NOTE: You'll know it's done when the cake is slightly risen, turning just a bit golden, and you can smell it. Also, if you gently press your fingertips on the surface of the cake, and no indentations are left, it's done.
  • In a clean bowl, whip the heavy cream with electric beaters until it is thick and pretty stiff, little peaks should form when you lift the beaters.
  • Grab your chilled custard from the fridge. Add one tsp of vanilla extract. Take the same beaters and whisk your custard, it will look funny at first, but after a few moments it will become nice and smooth.
  • Fold the whipped cream into the custard until they are combined.
  • Cool your cake for 2-3 minutes on the baking sheet. Lay a fresh sheet of parchment beside your cake and sprinkle it with powdered sugar.
  • Lift the cake with the sides of the parchment onto your table. Flip the cake onto the sugared parchment paper.
  • Remove parchment paper from the flipped cake.
  • Slather the filling onto your cake.
  • Roll it up, using the parchment to help.
  • Wrap the whole thing in cling wrap and chill for two hours before slicing.
  • Slice into pieces of your desired thickness and serve.

¼ cup matcha green tea powder, divided
¾ teaspoon baking powder
2 eggs, separated
½ cup white sugar
¼ cup sour cream
3 tablespoons 2% milk
1 cup heavy whipping cream
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
  • Sift flour, 3 tablespoons matcha powder, and baking powder together 3 times in a bowl.
  • Beat egg whites in a clean bowl using an electric mixture until stiff peaks form.

1 cup cake flour
2 Tbsp matcha powder*
1 tsp baking powder
1/4 tsp fine sea salt
5 large eggs, separated
3/4 cup granulated sugar
1/4 cup whole milk
Strawberry Mousse:
1 2/3 cup strawberry puree
1/2 gelatin sheet**, bloomed
1/3-1/2 cup granulated sugar, depending on sweetness of strawberries
2 cups heavy cream, chilled

Steps:

  • Matcha Green Tea Cake: Preheat oven to 400 degrees F. Line jelly roll baking sheet with parchment paper or silpat baking mat. Set aside. In a small bowl, whisk together cake flour, matcha powder, baking powder, and salt. Set aside. In a large bowl, whisk together egg yolks, granulated sugar, and milk until pale in color. In another clean bowl, whip egg white to medium-stiff peaks. Add dry flour mixture to yolk mixture. Fold to combine. Add whipped eggs in three additions. Gently fold to incorporate egg whites.
