CINNAMON BANANA BREAD WITH MAYONNAISE
This banana bread comes out moist and not too dense! The mayonnaise instead of oil/butter makes for a lighter tasting banana bread. Not only that, but it does not leave the fingers greasy! Enjoy :)

Steps:
- 1. In a medium sized bowl, add warm water. Add the sugar, make sure it dissolves, add the yeast, and make sure it dissolves. Let stand for 10 minutes, until it is creamy in color and foamy.
- 2. Add salt, mayonnaise, milk, and 2 cups of the bread flour. Start adding flour 1 tbsp at a time, until the dough chases the spoon around the bowl. Turn dough onto floured surface, and knead for 6 to 8 minutes.
- 3. Place dough into a greased bowl. Cover with a damp dish towel, or plastic wrap, let rise in a warm area for 1 hour. Punch dough down, knead again for 2 minutes. Place in a greased 9 x 5 loaf pan. Let rise again for another 40 to 45 minutes. Bake for 35 minutes at 375 degrees.
Tips:
- Choose the right mayonnaise: Not all mayonnaises are created equal. For the best results, choose a mayonnaise that is made with high-quality ingredients, such as avocado oil or olive oil. Avoid mayonnaises that are made with low-quality ingredients, such as soybean oil or canola oil.
- Use the right amount of mayonnaise: Too much mayonnaise can make your bread greasy and heavy. Too little mayonnaise will make your bread dry and crumbly. The ideal amount of mayonnaise is somewhere in between. A good rule of thumb is to use about 1/4 cup of mayonnaise for every cup of flour.
- Mix the ingredients well: It is important to mix the ingredients for mayonnaise bread thoroughly. This will ensure that the bread is evenly textured and that the mayonnaise is evenly distributed throughout the bread. Mix the ingredients until the dough just comes together.
- Let the dough rest: Before baking the mayonnaise bread, let the dough rest for at least 30 minutes. This will allow the gluten in the flour to relax and will make the bread more tender.
- Bake the bread at the right temperature: The ideal temperature for baking mayonnaise bread is 350 degrees Fahrenheit. This temperature will allow the bread to bake evenly without burning.
Conclusion:
Mayonnaise bread is a delicious and easy-to-make bread that can be enjoyed by people of all ages. It is a versatile bread that can be used for sandwiches, toast, or even as a side dish. With its light and fluffy texture and its rich and flavorful taste, mayonnaise bread is sure to be a hit at your next gathering.
