1/2 pound ground beef
4 tablespoons butter, divided
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1-3/4 pounds (about 4 cups) cubed peeled potatoes
3 cups chicken broth
1/4 cup all-purpose flour
2 to 4 cups shredded Velveeta
1-1/2 cups whole milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
1/4 cup sour cream

Steps:

  • In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. , Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

  • In 4-quart Dutch oven or saucepan, cook beef, onion, garlic and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain.

4 pcs hamburger bun

4 oz sliced dill pickle
¼ cup per serving potato fries

Steps:

  • Combine the ground beef and minced yellow onion in a large mixing bowl. Season with salt and pepper, then mix until evenly incorporated.
  • Portion the beef mixture into 4-ounce patties. Use a round mold to shape the beef patties.
  • Preheat the griddle and grease with cooking spray. Then, preheat the oven to 360 degrees F.
  • Grill the patties on the griddle for roughly 5 to 8 minutes per side.
  • Place 1 slice of American cheese on each patty. Allow the patties to cook for roughly 3 to 5 minutes, until the cheese is melted.

0.75 cups onion
0.75 cups mushrooms
0.75 cups carrots
0.75 cups celery
1 teaspoons dill weed
1 teaspoons mustard
4 tablespoons butter
3 cups chicken broth
0.75 cups ketchup
4 cups potatoes
0.25 cups flour
1.5 cups milk
16 slices american cheese
0.25 cups sour cream
1 units salt and pepper

Steps:

  • Brown beef, drain, and set aside. In the same pan, sauté onion, mushrooms, carrot, celery, dill weed, ground mustard and 1 Tbsp. butter until tender, about 10 minutes.
  • Add broth, ketchup, potatoes and beef. Bring to boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are done.
  • Meanwhile, in microwaveable container, melt rest of butter, add flour, and stir together. Add milk. With a wire whisk, mix together. Mixture will be lumpy, but microwave it on high, 3 minutes at a time, and then whisk. Continue whisking and cooking for 3 minutes at a time until mixture thickens into a white sauce and lumps are gone.
  • To the white sauce, add the cheese. Melt cheese into mixture in the microwave (4 to 6 minutes). Stir cheese into white sauce mixture. Add sour cream, salt, and pepper.
  • Depending on how thick you have cut your potatoes, you may find yourself waiting for them to finish. Stir cheese sauce mixture into the soup when potatoes are done over low flame.

This recipe was based on the Diners, Drive-Ins and Dives show. However, I'm not entirely happy with it. I think it would be easier to just make cheeseburgers. Season with salt and pepper as you like; however, Velveeta is incredibly salty and I would never salt any of this until after having a chance to taste it after the addition of the cheese. I put the half and half in when specified (with the Velveeta); however, the soup curdled. Not surprising considering most recipes call for things like that to be put in at the end, so I'm changing the recipe accordingly. Perhaps using full-fat half and half would solve the curdling problem also.

1 large onion, diced
3 tablespoons butter
1 lb lean ground beef (use very lean beef)
1/4 cup flour
1/2 cup water
16 ounces unsalted chicken stock
16 ounces Velveeta reduced fat cheese product
2 cups fat-free half-and-half
2 medium tomatoes, chopped
2 cups iceberg lettuce, chopped

Steps:

  • Melt butter and cook onion until translucent. Remove onion.
  • Put ground beef in pan. Season with pepper (and perhaps salt, but keep in mind that Velveeta is really salty). Cook until browned and somewhat crispy. Drain. Remove from pan.
  • Mix flour and water to make a slurry. Add chicken stock first and then slurry to the pan. Bring to boil, scraping bits off the bottom. Add Velvetta and cook until cheese is melted. Do not bring to a boil.
  • Add in onion and hamburger. Season to taste and lower heat to stove's lowest setting. Cover and cook for about 55 minutes. Add half and half, and heat only until serving temperature. Add tomatoes and lettuce at the end. Stir and serve.
