1 1/2 pounds ground beef (preferably 80/20 ground chuck)
2 large eggs (lightly beaten)
3/4 cup seasoned breadcrumbs
1/2 cup sweet onions (finely minced)
1/4 cup Parmesan cheese (fresh, finely grated)
1/8 cup Italian parsley (chopped)
1/4 cup heavy cream (or milk)
1 (6-ounce) can tomato paste
1 1/2 teaspoons dried oregano (crushed between the palms of your hands)
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon salt or to taste
1/2 teaspoon ground black pepper
For the Tomato Sauce:
1 teaspoon extra-virgin olive oil
1/2 cup sweet onion (minced)
1 large clove garlic (pressed)
1 (15-ounce) can tomato sauce
1 cup water
1 teaspoon dried oregano (crushed)
1/4 teaspoon dried basil
For the Garlic Bread:
1 loaf of artisan Italian bread (from the bakery, sliced 1/2-inch thick)

1 Roma tomato (seeded and chopped)
For the Casserole:
Optional: 1 teaspoon crushed red peppers

1/4 cup Italian parsley (chopped)

Steps:

  • Using a large dinner fork, combine the ground beef, eggs, breadcrumbs, onions, Parmesan cheese, parsley, milk, 1 tablespoon of the tomato paste (reserve the rest of the paste for the sauce), oregano, basil, garlic powder, salt and black pepper until thoroughly mixed.
  • Form the mixture into meatballs about 1 1/2 inches in diameter.
  • Place the meatballs on the prepared pan, not touching each other, and bake 15 to 20 minutes, until cooked through. Set aside. (Yield: About 54 meatballs.)
  • Place a 2-quart saucepan over medium heat.
  • Add the olive oil and minced onions. Cook until the onions begin to soften and turn translucent.
  • Add the pressed garlic and cook, stirring constantly, for 30 more seconds. Do not let the garlic brown.
  • Add the remaining tomato paste, the tomato sauce, water, oregano and basil.
  • Whisk until the tomato paste is incorporated.
  • Reduce the heat to low and let simmer for 10 minutes, stirring occasionally. This will be a rich, thick sauce. Adjust thickness to your personal tastes by adding water, a little at a time, until you reach the desired consistency. (Yield: About 4 cups of sauce.)
  • Spread one side of each slice of bread with mayonnaise.
  • Sprinkle with garlic powder, onion powder and salt and add diced tomatoes.
  • Preheat the oven to 400 F.
  • Spread the baked meatballs in the center of a 9- by 13-inch glass casserole dish, leaving space around the perimeter for the garlic bread.
  • Top with the tomato sauce.
  • Arrange the garlic bread standing upright on end around the edge of the casserole dish.
  • Sprinkle the casserole evenly with the crushed red peppers (if desired), mozzarella, Italian-blend and Parmesan cheeses; and finish with chopped parsley. Make sure the cheeses and parsley cover the garlic bread as well as the meatballs.
  • Bake for about 20 minutes or until the garlic bread is toasted.
  • Serve the meatballs partially covering the garlic bread with extra tomato sauce on the side for dipping.
  • Serve with a side salad to round out the meal.

8 slices garlic bread (the Texas Style frozen garlic bread, with or without cheese)
3 tablespoons olive oil
18 ounces frozen meatballs (about 36 meatballs)
1 (28 ounce) jar spaghetti sauce
1 tablespoon brown sugar
1/2 teaspoon garlic powder
1 teaspoon Italian spices (rub between the palms of your hands to release flavor)
1 cup water
2 cups mozzarella cheese, shredded
parmesan cheese, to garnish (Grated or Shredded) (optional)

Steps:

  • Heat oven to 400 degrees F. Arrange bread in a single layer in an ungreased 13X9X2 baking dish.
  • Bake about 8 - 10 minutes or until edges are light golden brown.

A palm full all-purpose flour or cornmeal
Extra-virgin olive oil, for drizzling, plus 2 tablespoons - 2 turns of the pan
2 tablespoons finely chopped rosemary leaves, a couple of sprigs
Coarse salt
1 1/2 pounds ground sirloin
1 medium onion, finely chopped
4 to 6 cloves garlic, finely chopped
Black pepper
1 (6-ounce) can tomato paste
1/2 cup grated Parmigiano-Reggiano
A handful flat-leaf parsley, chopped
1 teaspoon dried oregano
3/4 pound fresh mozzarella or brick mozzarella, your choice, sliced or grated

Steps:

  • Preheat oven to 425 degrees F.
  • On a round pizza stone or pan or on a rectangular baking sheet, using flour or cornmeal to dust the dough, spread out the dough to form your crust. If you are using a baking sheet, drizzle pan with extra-virgin olive oil then set crust in place. Poke the pizza dough in several areas with the tines of a fork. Drizzle the dough with extra-virgin olive oil then season it with finely chopped rosemary and a little salt. Place in oven 10 minutes.
  • Heat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, then the meat. Brown and crumble meat a couple of minutes, then add onions and garlic. Season the meat with salt and pepper then work in the tomato paste using the back of a wooden spoon to combine. Stir in the cheese, parsley and oregano.
  • Remove pizza crust from oven and top with meat. Arrange cheese over the pizza, working to edges. Return the pizza to the oven and bake until cheese is golden, another 10 to 12 minutes.

12 ounces hot Italian sausage, casing removed
1/2 cup panko
1 large egg
2 tablespoons whole milk
1/4 teaspoon kosher salt
One 24-ounce jar marinara sauce
Four 8-inch hoagie rolls
4 slices mozzarella
1 cup fresh basil leaves (large leaves work best for this)

Steps:

  • In a large bowl, combine the beef, sausage, and panko. In a small bowl, whisk together the egg, milk, and salt and add to the meat. Use clean hands or a fork to mix the ingredients until evenly combined, being careful not to over-mix. Form the mixture into 8 meatballs.
  • Add the marinara sauce to a straight-sided skillet and bring the sauce to a simmer over medium heat. When the sauce is simmering, gently nestle in the meatballs. Turn the heat down to low and cover the pan. Cook for 15 to 20 minutes, flipping the meatballs halfway through.
  • Slice each hoagie roll through the center, but do not slice all the way through. This will help keep everything in the sandwich. Working one at a time, tear a slice of cheese in half and place the halves on the base of the roll. Place a few basil leaves on the top half of the roll. Transfer 2 meatballs on top of the cheese and use a fork to smash the meatballs, exposing the meat in the center and spreading it to cover the base of the roll. Spoon a few tablespoons of extra sauce onto the meat. Close the sandwich and transfer it to a square of parchment paper. Tightly wrap the sandwich with parchment paper. Slice each sandwich in half diagonally and serve.
