YUMMY MEATLOAF

Yummy Meatloaf image

What makes this meatloaf so good is how you cook it! It's very important to cook this in a baking dish rather than a loaf pan. The grease will drain from the meatloaf this way, and it will be firmer and taste better.

Categories     Dinner

Yield 8 servings

Number Of Ingredients 18

1 lb ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
2 teaspoons salt
¼ cup bread crumbs
3 cloves garlic, minced
½ onion, diced
⅓ cup fresh parsley, loosely packed
1 egg
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon worcestershire sauce
1 tablespoon honey
4 medium onions
8 oz cheddar cheese, cubed
16 strips bacon
1 bottle barbecue sauce

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
  • Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
  • Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
  • Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
  • Brush the meatballs with barbecue sauce, covering them completely.
  • Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.
  • Enjoy!

Time 1h10m

Yield 1 piece, 8 serving(s)

Number Of Ingredients 13

2 lbs ground beef
1/2 red onion
1 1/2 cups quick oats
2 eggs
2 (4 ounce) cans tomato sauce
chili powder
garlic powder
onion powder
parsley
liquid smoke
Worcestershire sauce
2 cups ketchup
1 cup brown sugar

Steps:

  • Chop the onion then mix all the ingredients for the meat portion together, uncooked. All the seasonings should be eyeballed in -- just use your own knowledge of what tastes your family likes. Not too much of the liquid smoke or Worcestershire, but give a good few shakes of each. This really adds flavor. Mix together the ketchup and brown sugar for the topping and set aside.
  • Bake at 350°F for 30 minutes. Pull out the meatloaf and drain the excess juice from the pan. Put on the topping and bake for another 30 minutes. This goes very well with cheesy potatoes! Also, the leftovers can be used as meatloaf sandwiches, yummy!
  • ENJOY!

MEATLOAF!!!TOO BOMB FOR YOU!!!!

MEATLOAF!!!TOO BOMB FOR YOU!!!! image

Categories     Beef

Number Of Ingredients 18

3 tablespoons olive oil
1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
1 yellow onion, finely diced
Salt and freshly ground black pepper
5 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
2 large eggs, lightly beaten
1 tablespoon finely chopped fresh thyme leaves
1/4 cup chopped fresh parsley leaves
1/2 pound ground pork
1/2 pound ground veal
1 pound ground beef chuck
1 cup panko (Japanese) bread crumbs
1/2 cup freshly grated Romano
1 1/2 cups ketchup, divided
1 cup plus 2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 425 degrees F. Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, onion and salt and pepper, to taste, and cook until almost soft, 5 minutes. Stir in the garlic and 1/4 teaspoon the red pepper flakes and cook for 30 seconds. Set aside to cool. Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup and 2 tablespoons of the balsamic vinegar and the vegetables and mix until just combined. Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup and balsamic vinegar in a small bowl then brush the mixture over the entire loaf. Bake the meatloaf for approximately 1 to 1 1/4 hours. Remove from the oven and let rest 10 minutes before slicing.

Tips:

  • Choose the right ground beef. An 80/20 blend of ground beef is ideal for meatloaf, as it provides a good balance of fat and flavor. Avoid using ground beef that is too lean, as it will result in a dry, crumbly meatloaf.
  • Use fresh, high-quality ingredients. The better the ingredients you use, the better your meatloaf will taste. Choose fresh vegetables, herbs, and spices, and avoid using processed or pre-packaged ingredients whenever possible.
  • Don't overmix the meatloaf mixture. Overmixing the meatloaf mixture will result in a tough, dense meatloaf. Mix the ingredients just until they are combined.
  • Form the meatloaf mixture into a loaf shape. Use your hands to gently shape the meatloaf mixture into a loaf shape. Avoid packing the meatloaf mixture too tightly, as this will also result in a tough, dense meatloaf.
  • Bake the meatloaf in a preheated oven. Preheat the oven to the temperature specified in the recipe before baking the meatloaf. This will help to ensure that the meatloaf cooks evenly.
  • Let the meatloaf rest before slicing. After the meatloaf is finished baking, let it rest for 10-15 minutes before slicing. This will allow the juices to redistribute throughout the meatloaf, resulting in a more flavorful and moist meatloaf.
