MEDITERRANEAN BROWN RICE SALAD
My family and friends all love this salad, which they've referred to as "the Greek salad." The recipe makes enough to feed a crowd, so it's a perfect bring-along for a big party. No matter what you're looking for-something with the Greek flavors you love, or just a healthy, simple salad-it will not disappoint! If you'd like, substitute orzo for the rice. -Sarah Hawkins, Wanatah, Indiana

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your salad shine. Look for ripe vegetables, herbs, and grains.
- Cook the rice perfectly: Rice is the base of this salad, so it's important to cook it properly. Rinse the rice before cooking to remove any starch and then cook it according to package directions.
- Let the rice cool completely: Before adding the rice to the salad, let it cool completely. This will help prevent the salad from becoming mushy.
- Chop the vegetables and herbs finely: This will help them distribute evenly throughout the salad and make them easier to eat.
- Use a light dressing: A heavy dressing will weigh down the salad and make it less refreshing. A simple vinaigrette or lemon-herb dressing is a good option.
- Season the salad to taste: Add salt and pepper to taste and adjust the amount of dressing as needed.
- Serve the salad immediately: Mediterranean rice salad is best served fresh. If you need to make it ahead of time, store it in the refrigerator for up to 2 days.
Conclusion:
Mediterranean rice salad is a delicious and healthy dish that is perfect for a summer meal. It is packed with fresh vegetables, herbs, and grains, and it is dressed with a light and flavorful dressing. This salad is also very versatile and can be easily customized to your liking. So next time you are looking for a quick and easy meal, give Mediterranean rice salad a try.
