MEXICAN BEAN DIP

This recipe was given to me by my siser over 15 years ago, and I have many requests for it. When layered in a glass dish, it's very colorful for holiday parties. For a more casual get together with a festive look, such as a BBQ, layer it in a 10" iron skillet, and tie a bandana around the handle.

This isn't very pretty. You can add another cup of cheese on top if you want and add veggies, guacamole and sour cream to make it more like nacho dip. I personally can eat the whole thing just like it is. Leftovers go well in a soft tortilla.

MEXICAN 7-LAYER BEAN DIP image

Categories     Bean

Yield 8 cups

Number Of Ingredients 9

1 can (16oz) refried beans
16 oz sour cream
1 pkg Taco Seasoning mix
2 cups (8oz) cheddar cheese, shredded
1 cup prepared guacamole
1 cup chopped tomato
1/2 cup sliced green onion

Tips:

  • Choose the right beans: Pinto beans are the classic choice for bean dip, but you can also use black beans, kidney beans, or a mix of different beans. Just be sure to soak them overnight or for at least 8 hours before cooking.
  • Cook the beans until they're tender: The beans should be soft enough to mash easily, but not so soft that they fall apart. If you're using a slow cooker, cook the beans on low for 6-8 hours or on high for 3-4 hours.
  • Season the beans well: Don't be afraid to add plenty of spices and seasonings to the beans. Cumin, chili powder, garlic, and onion are all great options. You can also add fresh herbs like cilantro or parsley.
  • Mash the beans until they're smooth: You can use a potato masher, a food processor, or even a blender to mash the beans. Just be sure to leave some texture so that the dip isn't too smooth.
  • Add your favorite toppings: There are endless possibilities when it comes to toppings for bean dip. Shredded cheese, diced tomatoes, sour cream, guacamole, and Pico de gallo are all popular choices.
