1 can (4 ounces) chopped green chiles
1/2 medium onion, cut into wedges
1/2 medium sweet red pepper, chopped
4 garlic cloves, halved
1 can (15 ounces) black beans, rinsed and drained
1 large egg
1 tablespoon chili powder
3/4 teaspoon ground cumin
3/4 cup dry whole wheat bread crumbs
4 whole wheat hamburger buns, split
4 tablespoons reduced-fat sour cream
4 tablespoons salsa

Steps:

  • Preheat oven to 375°. Place chiles, onion, pepper and garlic in a food processor; pulse until finely chopped. Drain and set aside. In a large bowl, mash beans. Add the onion mixture, egg, chili powder, cumin and bread crumbs; mix well., Shape into 4 patties; transfer to a 15x10x1-in. baking pan coated with cooking spray. Refrigerate for 30 minutes. Bake until heated through, 8-10 minutes on each side. Serve on buns with sour cream and salsa.

2 x 400g/14oz cans kidney beans, rinsed and drained
100g breadcrumb
2 tsp mild chilli powder
small bunch coriander, stalks and leaves chopped
1 egg
200g tub fresh salsa
150ml low-fat natural yogurt
juice ½ lime
6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve

Steps:

  • Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher. Add the breadcrumbs, chilli powder, coriander stalks and ½ the leaves, egg and 2 tbsp salsa, season to taste, then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. The burgers can now be frozen. Place on a non-stick baking tray, then grill for 4-5 mins on each side until golden and crisp. To cook from frozen, bake at 200C/fan 180C/gas 6 for 20-30 mins until hot through.
  • While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.

3 cloves garlic, minced
½ cup bread crumbs
½ cup whole wheat flour
2 tablespoons vegetable oil

1/2 cup CILANTRO, FINELY CHOPPED
1/2 cup BREAD CRUMBS
1 l EGG LARGE, LIGHTLY BEATEN
1/2 teaspoon CHILI POWDEWR
1/2 teaspoon CUMIN

Steps:

  • Heat 1 Tbs. of the oil in a 10-inch skillet over medium heat. Add the scallions, poblano, and garlic and cook until beginning to soften, 1 to 2 minutes. Transfer to a food processor. Add the beans and pulse 2 or 3 times to roughly chop. Be careful not to overprocess.
  • Transfer the mixture to a large bowl and gently mix in the cilantro, breadcrumbs, egg, chile powder, cumin, and 3/4 tsp. salt. Shape the mixture into 4 equal 3/4-inch-thick patties. Refrigerate, covered, for at least 30 minutes and up to 4 hours.

1/4 lb sliced white fresh button mushroom

1 medium shallot, chopped
½ medium green pepper, chopped
4 cloves garlic, minced
3 sprigs fresh basil, chopped
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
1 ½ teaspoons smoked paprika
salt and ground black pepper to taste
2 large eggs, beaten
1 cup bread crumbs

Steps:

  • Mash black beans in a bowl with a potato masher, leaving a few beans whole for texture; set aside.

2 cups cooked brown rice, preferably warm
1/4 cup finely chopped onion
