1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®), crushed
3 cups chopped cooked chicken
1 (15.25 ounce) can corn, drained
2 cups shredded Mexican cheese blend, divided
1 ½ cups salsa
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • Spread crushed chips out into the bottom of the prepared baking dish.
  • Stir chicken, 1 cup Mexican cheese blend, salsa, cream of mushroom soup, cream of chicken soup, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
  • Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.

3 small cans of canned chicken, drained (you may also use boiled chicken, removed from bone, and chopped)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 can chicken broth
1 large onion, diced
1 large bag of Doritos (at least a 10 oz bag)
1 bag (12-16 oz.) grated cheddar cheese
salt & pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Add cream of chicken soup, cream of mushroom soup, Rotel, chicken broth, diced onions, salt & pepper in a large mixing bowl. Combine well.
  • Using a fork, shred the chicken loosely and add to the mixture. Stir well.
  • Crush the Doritos. Simply open a small opening in the bag to allow the air to escape. Roll up end loosely and crush with your hand until all the chips are crushed.
  • Spray a 9x13 baking dish with cooking spray. Add ½ bag of the Doritos in the bottom of the pan.
  • Slowly pour the soup mixture on top of the Doritos.
  • Top with ½ bag of the shredded cheese.
  • Place in 350-degree oven and bake 30 minutes.
  • Remove from oven and top with the other half of the bag of Doritos. Top with the other half of the shredded cheese.
  • Bake an additional 10 min.
  • Remove from oven and allow to sit for approximately 10-15 minutes.

This FAST and EASY mexican chicken dorito casserole is a family favorite and a HIT! It's ready in minutes and you may have everything you need right in the pantry! Lots of substitutions as well!

2 lbs chicken (cooked and shredded)
1 tsp kosher salt ((If table salt, use only 1/2))
1/2 tsp ground black pepper
1 Tbs Onion Powder
1 Tbs Garlic Powder
15 oz tomatoes and green chilis (Also known as Rotel)
11 oz Doritos (Any flavor will work, but we use Nacho flavor usually)
1 Cup Sour Cream
4 oz cream cheese (room temp so it will mix in ok or microwave for 20 secs.)
10.5 oz cream of chicken soup
15 oz black beans (canned)
15 oz corn (shoepeg or sweet crip corn works best. )
8 oz shredded mexican (any shredded cheddar works)
1 tsp cumin
1 tsp smoked paprika
pico de gallo (for garnish)

Steps:

  • Shred the cooked chicken. Spray the casserole dish with cooking spray and preheat the oven to 350.
  • Mix Chicken, salt, pepper, onion, garlic, tomatoes and green chilis, cream cheese, soup, beans, corn, half of the shredded cheese, cumin and paprika together.
  • Put a layer of chips on the bottom of the casserole dish.
  • Spread the chicken mixture over the layer of chips. Don't worry if they break.
  • Cover with the remaining chips and sprinkle the cheese over the top. (Or you can sprinkle the cheese and then cover with the chips, it's your choice, with the chips on top, the chips stay more crispy).
  • Bake at 350 for 20-25 minutes until bubbly and browned. Top with pico for garnish

2 (10 3/4 ounce) cans creamy chicken verde soup
1 (10 ounce) can Rotel Tomatoes
2 cups frozen corn
1 cup monterey jack pepper cheese, shredded
1 cup milk
4 green onions
1 (16 ounce) bag nacho cheese flavor Doritos

Steps:

  • Put the cooked chicken on the bottom of a large, greased casserole dish.
  • Put crushed Doritos on top of chicken.
  • Put the chopped green onion next and the corn.
  • Mix the soup with the milk and tomatoes.

1/2 cup butter

1 teaspoon Creole seasoning (such as Tony Chachere's®), or to taste
2 pounds skinless, boneless chicken breast halves, cut into chunks
1 (10.75 ounce) can cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (14 ounce) can whole kernel corn
1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®)
1 (8 ounce) package shredded Mexican cheese blend
