Time 30m

Number Of Ingredients 9

10 large eggs
Coarse salt and ground pepper
3 tablespoons olive oil
2 bell peppers (ribs and seeds removed), thinly sliced
1 medium red onion, halved and thinly sliced
1 cup shredded white cheddar (4 ounces)
1 tablespoon red-wine vinegar
1 head Boston lettuce (about 10 ounces), torn into pieces
1/2 cup store-bought salsa, for serving

Steps:

  • In a medium bowl, whisk eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper; set aside. In a 10-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high. 1 medium tomatoes, peeled, seeded and quartered
1/2 teaspoon ground coriander
1/2 teaspoon chili powder
1/2 cup onion, chopped
1 cup frozen corn
6 egg whites

1/4 cup skim milk
1/4 teaspoon salt
1/4 teaspoon black pepper

Tips:

  • Use a large skillet or cast-iron pan that can withstand high heat and is oven-safe.
  • Heat the olive oil over medium-high heat before adding the vegetables. This will help to create a nice sear and prevent the vegetables from sticking.
  • Cook the vegetables until they are tender but still have a little bit of bite. This will help to ensure that they retain their flavor and texture in the frittata.
  • Use a variety of vegetables in your frittata. This will add flavor and color to the dish.
  • Don't overcook the eggs. The frittata should be cooked until the eggs are just set, but still slightly runny in the center. This will help to create a creamy and fluffy texture.
  • Serve the frittata immediately or let it cool slightly before slicing and serving. It can be served for breakfast, lunch, or dinner.

Conclusion:

A Mexican frittata is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover vegetables and is also a good source of protein and fiber. With a few simple tips, you can easily make a delicious Mexican frittata at home.
