Mexican Kisses image

This is a recipe from one of my friends in New Mexico from 1960. She got it from an extension course she took in 1936.

Number Of Ingredients 6

2 tablespoon(s) knox plain gelatine
1/2 cup(s) cold water
2 cup(s) real maple syrup
1 cup(s) powdered sugar
1 cup(s) chopped nuts
2 teaspoon(s) vanilla extract

Steps:

  • Dissolve gelatine in a dish of cold water that is placed over a dish of hot water. Stir to help dissolve.Place dissolved gelatine in a saucepan. Place saucepan over medium heat and add the Maple syrup. Heat until blended, about 1 minute..remove from heat and beat with a whisk until mixture begins to look creamy. Gradually whip in the powdered sugar, vanilla and chopped nuts. Allow to stand a few minutes before dropping onto waxed paper or parchment paper.

Yield Makes about 24 meringue kisses

2 large egg whites
1/2 cup sugar

Steps:

  • Preheat oven to 200°F. and butter and flour a large baking sheet, knocking off excess flour.
  • In a bowl with an electric mixer beat whites until they hold soft peaks. Gradually add sugar, beating, and beat until meringue holds stiff, glossy peaks. Drop heaping teaspoons (not measuring spoons) of meringue about 1 inch apart onto baking sheet and bake in middle of oven 45 minutes. Turn oven off and leave meringues in oven 1 hour more. With a metal spatula transfer meringues to a rack to cool completely. Meringue kisses may be kept in an airtight container at room temperature 5 days.

Number Of Ingredients 7

1 tablespoon cocoa powder (sifted)
1 ounce unsweetened chocolate square (melted and cooled)
4 large egg whites
1 pinch salt
1 cup granulated sugar
1 teaspoon vanilla
cocoa powder (for dusting cookie sheets)

Steps:

  • Preheat oven to 300 degrees.
  • Grease three cookies sheets and dust with cocoa powder.
  • Melt the chocolate square and set aside to cool.
  • Beat the egg whites with salt until soft peaks form.
  • Add sugar slowly and beat until mixture very stiff and shiny.
  • Fold in vanilla, melted chocolate, and the 1 tbsp cocoa powder.
  • Drop by heaping teaspoonfulls (2 inches apart) onto prepared cookie sheets.
  • They will have the shape of chocolate kisses.
  • Bake 30 to 40 minutes.
  • Remove cookies from sheets immediately.
  • Cool completely and store in an airtight container.
