6 thick leeks, trimmed of the roots and dark green, washed then chopped
10 cups chicken stock

Steps:

  • Saute the bacon in a large soup pot over medium heat until crisp, then remove it from the pan, drain on paper towels, and reserve for the garnish.

2 tablespoons margarine
2 tablespoons olive oil
½ cup dry sherry
3 (10.5 ounce) cans condensed beef broth
3 ¾ cups water
½ teaspoon ground black pepper
½ cup uncooked orzo pasta

Steps:

  • In a large pot over medium high heat, saute the mushrooms and leeks in the butter or margarine and olive oil until tender. Add the sherry and reduce liquid by half.

1 tablespoon extra virgin olive oil
4 large leeks, white and light green parts only, cleaned and sliced
4 garlic cloves, minced
7 cups chicken stock, vegetable stock or water
1/2 cup basmati rice
1 bay leaf
Salt and freshly ground pepper
Pinch of cayenne (optional)
1/2 cup milk, plain yogurt or a combination of milk and creme fraiche
Chopped chives and/or croutons

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot and add the leeks and a generous pinch of salt. Cook, stirring, until leeks are tender, about 5 minutes. Add the garlic and stir for about a minute, until the garlic smells fragrant. Add the stock or water, the rice, bay leaf and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Taste and adjust salt. Remove the bay leaf and discard.

1 medium onion, thinly sliced
1/4 cup butter, cubed
6 medium potatoes, peeled and sliced

Pinch ground nutmeg
2 cups half-and-half cream

  • Cut leeks into thin slices. In a skillet, saute leeks and onion in butter until tender but not browned. Transfer to a soup kettle or Dutch oven. Add potatoes, broth and parsley; cover and simmer until the vegetables are tender. Strain; set broth aside. Puree vegetables in a blender or food processor. Return puree and broth to pan. Steps:

  • Clean the leeks and rinse well to get rid of sand and soil.
  • Cut off the ends of the dark green parts, leaving all the white parts plus a suggestion of pale green. (Reserve the extra greens for soup stock.).
  • Put the leeks in a large pot and cover with water.
  • Bring to a boil, reduce the heat, and simmer uncovered for 20 to 30 minutes.
  • Pour off the liquid and reserve.
  • Place the leeks in a bowl.
  • The juice is to be drunk (reheated or at room temperature to taste) every 2 to 3 hours, 1 cup at a time.
  • For meals, or whenever hungry, have some of the leeks themselves, 1/2 cup at a time.
  • Drizzle with a few drops of extra-virgin olive oil and lemon juice.
  • Season sparingly with salt and pepper.
  • Sprinkle with chopped parsley if you wish.
